So, I have a bunch of celery in the fridge. I want to try something new with it and am wondering if anyone has any good recipes which include cooked celery? Other than soups, I mean.
I love roasted veggies (cauliflower being my favorite), but I wonder how roasted celery would turn out/taste....... :confused: I'm a little scared to try to it. hehe!

My mother always includes celery when she's making roast vegetables.

I like it add it to my stirfries too.

Carrot and Celery Saute

350 g carrots, peeled and sliced
1/2 a head of celery, washed and cut into chunks
2 tablespoons olive oil
parsley
1 small onion, peeled and thinly sliced
50 g green olives, stones removed
Salt and pepper to taste
Heat the oil in a saucepan, add the onion and celery, and cook gently until the onion is golden. Add the carrots, celery and parsley and season to taste. Cover with a lid and cook gently for 10 minutes, shaking the pan frequently. Add the olives, stir and replace the lid. Simmer very gently for a further 10 minutes.

I stole this recipe from somewhere online cannot remember where though!

I roast celery too. Taste and texture is nicer than when it's raw.

I put celery in stews, soups, chilies, spag-bol and all sorts. So very yummy.

Stirfry celery with broccoli and sesame seeds or cashew nuts. Very nice.

I've never heard of anyone roasting celery before. Sounds good though!
