So, we went to the local Oriental store and came home with this Ginormous, beautiful Chinese Cabbage (along with the Daikon :-). In the past we just sort of mixed it in with other things. It just occurred to me I should get on here and ask... What are you folks favorite uses/recipes for Chinese Cabbage?
Thanks a Bunch!!

I'm afraid I just mix it with other things as well - usually a stir-fry. It's also nice raw in salads.

A good method that works with virtually any sort of cabbage is to stir fry it briefly in a small amount of oil and then mix in a large dollop of coarse-grained mustard just before serving. This goes well with smoked tofu, or vegan frankfurters if you can get them. I'm sure it would work with Chinese cabbage too - fusion :)

I stir fry it - with cashew nuts and spring - then put in some Tamari and seseme oil. I do this with anything green.

In China here, most for soup/hot pot.
I stir fry it, or make soup with dry bean curd. :)

cut it into chunky peices, shallow fry it in a little veg oil with mustard seeds or onion/nigella seeds then add soy sauce at the end.
