does anybody have a tried and tested sauerkraut recipe please?

Are you after a recipe to make your own sauerkraut? (I haven't got one of these I'm afraid.) Or a recipe to make with ready-made sauerkraut? (I have a good one somewhere.)

I want a recipe to make my own sauerkraut ... but I'll take your other recipe too please :bigsmile:

Here you go. I can't remember where I got it from originally - think I adapted it from something found on the web:

Braised sauerkraut with potatoes and pseudo-sausages
(Makes enough for two hungry'uns or four abstemious'uns)

half a large (c 800 gram) jar of sauerkraut
1 tbsp olive oil
black pepper
tomato sauce made with one tin of plum tomatoes and an onion (ready-made
tomato sauce would do)
1 teaspoon paprika
6 baby new potatoes, quartered
4 tofu frankfurters or similar sliced into bite-size bits
c1.5 glasses dry white wine

1. Rinse the sauerkraut in a colander, then steep in cold water for half an
hour or so. Then drain, and squeeze out as much of the water as possible.
2. Heat olive oil in a large saucepan over a low heat and stir-fry the
sauerkraut for 5 minutes.
3. Add pepper, tomato sauce, wine and potatoes and mix thoroughly.
4. Bring to the boil, then turn heat right down. Cover and cook for 50-60
minutes - the potatoes should just be tender. While it's cooking, check
regularly to make sure it's simmering slowly and not drying up - if it
threatens to, add a little boiling water.
5. Add paprika plus sausages, mix, cover again and braise for a further 10
minutes so that sausages are heated through.

Serve with wholegrain mustard.
