This is a recipe that I remember from my childhood (the 80s) and loved at the time.

No doubt it came from a newspaper or something that my mother read - it's in no way a traditional recipe, or at least if it is it's a traditional 80s dinner party recipe!

I found a box of mango jelly crystals in the cupboard the other day that were 6 months out of date. Can't remember exactly when or where they were bought from, but the front of the cardboard box proudly stated "made in pakistan". The original recipe used orange jelly - I expect you can use any from that family of fruits.

Put a small tin of apricots into a blender and whizz. Add hot water and jelly crystals (amount specified on packet) and blend. Put in a bowl and refridgerate.

When set add 2 cartons of soyatoo cream ontop (whisked first) and put back in the fridge

In a pan melt some (I don't remember the amounts) marge and golden syrup in equal amounts. Add and coat cornflakes, then put on top of the cream. Put back in the fridge, then serve.

It's not 100% as I remember it, but I'd make it again and thought I'd share! :thumbsup:

:p Oi! I remember buying it - you don't see vegan mango jelly very often, and I cheated to find out when :D
