Vegan : 严格素食(yan ge su shi), ppl usually just say 素食(su shi)
Vegetarian: 素食主义 (su shi zhu yi)……

Since we're discussing :)...one of my friends told me you could say vegan as 全素食. Is that right? (Or it might just be a Taiwanese saying, I'm not sure.)

if you say 全, might be 全素but no 食, whatever both are OK....
