View Full Version : Vegan Doughnut Recipe

Ingredients:

2 packets yeast
1/3 cup + 3 tbsp sugar (for dusting doughnuts)
1 cup warm water
4 cups plain flour
1/2 tsp salt
1 cup soy milk
1/4 cup margarine, melted or veggie oil
1/2 tsp vanilla
oil for deep frying

Method:

In a glass bowl, mix together the yeast, 1 tablespoon sugar and the water until the yeast and sugar has dissolved. Allow to sit for ten minutes.

In a separate large bowl, combine the flour and salt. In a third bowl, combine the 1/3 cup sugar and remaining ingredients, except for oil. Add the yeast mixture, and then gradually add the flour and salt. Combine until a stiff dough forms.



Cover and allow to sit for one hour.


On a floured surface, knead the dough for about one minute, then roll out to about 3/4 inch thickness. Cover with a dish towel or cloth and let rise for about 20 minutes, until doubled in size.



In a deep fryer or a deep pan, heat several inches of oil over high heat. Test the temperature by placing a small piece of dough in the oil. The oil is the right temperature when the dough rises to the surface almost immediately. If it doesn't rise to the top, the oil is not yet hot enough.



Fry the doughnuts in oil for a minute or two, turning over as needed, until browned on both sides. Allow to drain on paper towels.



Sprinkle over remaining sugar.


Makes about 12 vegan doughnuts.

I have made them several times and fooled non-vegans who thought I'd bought them from a supermarket. They are worth the effort and honestly they are sooo good that oe or two, maybe three are just not enough!:o

My OH ate 5 in a row the first time I made them. *oink!*:lol:

You can also freeze them after cooking and gently reheat them in the oven. I made so many a few months ago and didn't want them going to waste or my OH snaffling them before I could!:p

To add jam-roll the dough into a ball and make a hole with your thumb in the centre. Add the jam and pull dough over hole and seal closed, then deep fry.

When I get chance to make more I'll take photos. At present I'm cooking out of a microwave and slow cooker as I only have half a kitchen.:(

Thanks so much for the recipe!!! I can't wait to try it. Especially because I've just undergone a baking/cooking craze and I am insane with it..haven't stopped in one week.. :P
