Hello,
Does anyone know of a good simple vegan cream cheese recipe that calls for minimal ingredients and simple preparation? I've seen a few recipes, but they're fairly complicated and time-consuming. I prefer something simple and affordable so I only need to buy a few ingredients. Please help.

Thanks.

do you not like tofutti cream cheese?

No, I don't like Tofutti cream cheese or other Tofutti products because they contain sugar and/or corn syrup, which are both refined synthetic sweeteners. Tofutti cream cheese also contains a few synthetic additives. I prefer to eat whole natural food.

This (http://www.theveggietable.com/recipes/tofucreamcheese.html) looks simple, sweet and delicious:

1 c soft, medium, or silken tofu
¼ c cashews
1-2 T water or soy milk
2 t sweetener: raw sugar, maple syrup, or brown rice syrup
1 t salt
½ t pepper

Drain the tofu, wrap in towel, and squeeze out excess moisture.
Place all ingredients in food processor and blend until smooth, 1-2 minutes. Taste and adjust: add more tofu/water for a thicker/thinner consistency; more sweetener/dash of lemon lemon for sweeter/less sweet flavor.
Transfer to container, cover, and - for best flavor - refrigerate overnight. Use within 4-7 days.
