View Full Version : Foxytina + The Nut Roast

I followed that recipe Foxy for the nut roast and mine came out like crap. Felt like a brick both in the loaf pan and in my stomach. Didn't slice either, just crumbled once the knife touched it. Do you have any secrets??

that is SO odd. mine is so good??? are u sure u followed the recipe? are your cashews raw or roasted? how small are the bread crumbs?

Well, I do think I had the bread crumbs too large, they were more like bread cubes and the cashews I used were roasted. When I made the stuffing part, the little amount of melted Earth Balance didn't seem to coat the bread at all either.

mine WAS crumbly, it didnt really come out in 1 slice, rather it came out in sort of a scoop onto the plate once sliced. altho its still delish i think. i process the cashews in a food processer until its almost powdery but theres still a few small chunks. then i process the bread into small cubes. (i use brown rice bread which is really dry, maybe thats why? maybe its too wet and the rice bread soaks up the moisture, and wheat bread isnt very dry)

u need raw cashews, roasted are dryer i think. and u can always use more melted earth balance then what u used. it is supposed to be pretty dry tho.

Maybe it was the bread, the roast was really dry. The cashews were in very small pieces but obviously, not small enough. The dish is just so bready. All those Atkins people would pass out if they took a bite :D

i didnt really notice the breadness part of it, it was so moist. i do think the bread needs to be in really small bits tho. mine was tiny bits of bread, like nearly crumbs but with a few random small cubes. and i would try raw cashews too, and process them until powdery.

oh and it says "3 cups bread cubes, toasted" for the stuffing, i dont toast mine. i just use it fresh.

Ahh, I did toast the bread and had it in cubes instead of tiny bits. Maybe that's why. I'll retry the recipe another time. My husband tried it and wouldn't eat any. I threw the rest out. I hate when that happens but you never know when trying a recipe. This morning for breakfast, I made eggless omelettes stuffed with kale and melty white cheez sauce from the Vegan Vittles cookbook. Came out really well.

oh and i also chop the onions very fine with the processer so theres alot of juice in it, that must help make it more moist, and the onions and celery for the stuffing are also chopped very fine, which must make the stuffing more moist because theres water from the veggies when i add them.

mmm omelettes, that sounds so delish. do u have the recipe?

Foxytina - I don't see your recipe for nut roast on this thread :(

OH MY!

My boyfriend and I didn't go to any thanksgiving dinners this year. But I didn't want him to miss out on some yummy, homemade, filling, comfort food...

So, I decided to make him a feast! And what a feast it was.

I didn't make any other vegetable dish, I ran out of time. ( I had to wait to borrow a bread pan from my mom!) But i think some nice carrots and broccolli would be good for the next feast.

I'm definatly making this for xmas. even thought I don't celebrate it, my family somehow manages to get me there. So, this year, If I end up going, I'm bringing this lovely meal with me.

Oh they will be drooling.

It's a bit time consuming - but well worth it! I definately say give this a try!

For the stuffing - I added a bit of water to mine to make it a little less dry. It turned out great!

And for the gravy - I added an onion bouillon cube! It made the difference!

this is the nut roast i always talk about! :D its soooo yummy isnt it! i make it every holiday! the next day, it really tastes like turkey and i use slices of it for "turkey sandwiches". yummmm.

oh and to eat with it, i like candied carrots, mashed potaotes, sweet potatoes and anything else i can get my hands on. ive been making this for a couple years now :D

Roxy - you should try this! It's so worth it and it makes a lot of leftovers!

Foxy - I can't believe i didn't try this before. WOW... I just had leftovers for lunch, it slices much better the next day. :)

Have you tried the gravy with it foxy? it definatly makes the meal!

yes but i make a different gravy. this is the recipe. i just threw these ingredients together one day in hopes for a faster gravy. its DELICIOUS.


1 vegetable bouilion cube
2 cups water
half teaspoon onion powder
few good dashes garlic powder
a little sea salt and pepper
couple tablespoons full of nutritional yeast
few good dashes of tamari soy sauce
a little squirt of mustard
about 1/4 cup to 1/2 cup of brown rice flour
tablespoon of vegan butter

mmm its thick and rich.

yes i found it sliced much better the next day aswell :D its sooo yummy on sandwiches! my bf wanted me to use this for his sandwiches for work, all week long when we had the nut roast.

That gravy recipe sounds a lot easier than the one I made.

I am going to give that a try if you don't mind. :)
