Breakfast: Chocolate strawberry overnight oats, pear, peach

Lunch: Edamame Miso Ramen (awful), apple, Nakd Nudie choc mint bar

Dinner: Innocent sweet chilli veg pot (not great), vegetables, custard

Snacks: Veg sticks, mints, apple

Drinks: Water, tea, coffee, soya latte

swiss chard fritatta (Vegan Brunch)
roasted butternut squash
black bean soup
baked chips
few rum/diet coke mixed drinks

Breakfast: buckwheat/cornpancakes with banana and blueberries
Lunch: tabbouleh salad with chickpeas and romanesco
Dinner: roasted parsnips & carrots with a fake fish steak

Breakfast: Toast, Bounce ginseng ball, pear.

Lunch: Potato, smoked tofu, baby plum tomato & onion salad. Exotic yogurt, apple.

Dinner: Spelt pasta with tomato sauce and smoke tofu, veg. Microwaved apple & custard

Snacks: Carrots

Drinks: Water, coffee, soy latte, Ribena raspberry & cranberry, tea (Liquorice mint, Chai, Chamomile & Vanilla)

Bedtime snack: Banana bread

Yesterday:

breakfast: soy yoghurt with granola, linseeds and pear
snacks: apple and banana
lunch: leftover tabbouleh salad with fresh spinach
snacks: olives and small bag of nacho's
dinner was a potluck, i had curried lentil/spinach soup, corn/broccoli soup, baked broccoli in some white sauce and the lasagna from Appetite for Reduction :lol:

Breakfast: 2 slices of bread with flax seeds and pumpkin seeds, smoked tofu and a banana
Lunch: coconut cake made by me, raw cashew, dates and 2 apples
Snack: 4 sugar-free biscuits
Dinner: pea with soy, an apple and soy pudding

leftover brown rice with Thai ginger veg and tofu
diet cola
dinner at dogtown (http://www.dogtownhots.com/):
veg dog on french roll topped with sauerkraut, cooked onions and mustard (German Shepherd Dog)
veg dog on french roll topped with mustard, relish, raw onions and peppers, pepperoncinis, tomatoes and celery salt (Chicago Bull Dog)
home fries topped with veggie chili (very little- I was stuffed!)
and a Birch Beer

Yesterday:

Brunch-whole wheat toast with blackberry preserves
Snack-popcorn
Dinner-homemade potato soup (veg bouillon, potatoes, vegan cheddar, onions, garlic, soy milk, parsley, salt and pepper)
salad and whole wheat crackers w/ soup
Snack-popcorn again (I know, I know! It was a popcorn kind of day! lol)

drinks: coffee, tea, water, and a sugar-free Hawaiian punch (I had a weird day. lol)

Breakfast: Chocolate overnight oats with cherry raising, berries, flax & Cocoa Cherry Pie Granola. Pear

Lunch: Smoked TLT, yogurt, apple

Dinner: Amy's Lentil Soup, bread with Vitalite, banana bread

Snacks: Apple, 2 plums, Jammy Dodger cereal bar, Nice biscuit

Drinks: Water, coffee, tea, 2 soy lattes

Lunch: kale and sweet potato salad, apple w/ pb
Dinner: veg sushi (avocado roll, cucumber roll, vegetable roll)
Dessert: Mac the Chip cookie from ABC

I am new here, so I don't know if I am allowed to post in this thread for things other than what I ate today.....but here goes......Is your homemade bagel recipe posted anywhere? If not, I sure would like to have it. Love to make all sorts of breads. :)

Yesterday

breakfast: soy yoghurt with granola, linseed and pear
snack: apple and banana
lunch: leftover tabbouleh salad with avocado
snack: cucumber sticks with tartex spread, some mixed nuts with raisins
diner: mango bbq beans (from Appetite for Reduction) in tortillas with lots of nutritional yeast and sauteed yellow pepper & spinach

pretty much the same as the day before, for the comfort of it. will try some new things today :)

I apologize in advance if this isn't an appropriate place for this, but here you go Amethyst! It's not my recipe I found it online.

BAGELS



1 c warm water (110 degrees)
2 1/4 tsp (1 .25oz pkg) active dry yeast
2 tbsp sugar
2 1/2 c bread flour
1 1/2 tsp salt
oil for brushing
cornmeal


Note: this recipe can be made in a bread machine using the dough cycle. Add an extra 1/2 c flour to the ingredients and meet me in step 4.



1. In a the bowl for your stand mixer, dissolve yeast and sugar in the water. Allow to sit for 10 minutes, until your yeast becomes foamy.

2. Add in the bread flour and salt. With the dough hook of a stand mixer, mix on the lowest speed until the dough comes together and cleans the sides of the bowl. Increase the speed a little and let the machine kneed the dough for about 2 minutes.

3. Place dough ball in a large, greased bowl. Let dough rise in a warm environment until it doubles, about an hour.

4. Place dough on a lightly floured surface. Cut into six equal pieces. Roll each piece into a rope and pinch the edges of the rope closed to form a circle. Let newly formed bagels rise again for about an hour (I just cover them with a towel and leave them on my counter top for this step).

5. Preheat oven to 375 degrees. In a large stockpot, bring water to a boil. Drop a bagel into the boiling water. Boil for 30 seconds, turn over, and boil for another 30 seconds. Place on paper towels to drain. Repeat this step with remaining bagels.

6. Line a baking sheet with parchment paper. Sprinkle cornmeal over the paper. Place bagels on the baking sheet. Brush with the oil. If desired, sprinkle on poppy seeds or kosher salt.

7. Bake in preheated oven for 20-25 minutes, until bagels turn a golden brown. Cool on a wire rack and store in an air-tight container.

Breakfast: Toast, Hot cross bun (untoasted) with raspberry jam, pear
Lunch: Huge salad, Sandwich (BBQ kidney bean loaf with Tofutti cream cheese), exotic yogurt, apple
Dinner: BBQ kidney bean loaf & baked potato, veg, banana bread
Snacks: Nice biscuit, pear, plums
Drinks: Water, coffee, Ribena, soy latte.

L-Leftover potato soup and homemade whole wheat bread
D-Large dinner plate filled with salad, w/ homemade whole wheat bread and Earth Balance spread
Snack-Baby carrots and cucumbers w/ chipotle dip

drinks- coffee, tea, water, and a glass of red wine

breakfast: lots of grapes, oatmeal with soymilk and raisins
lunch: salad with lots of vegan shoarma (i think it's spelled shawarma in english?), baked peppers and garlic sauce
snack: banana, mixed nuts and raisins
diner: tortilla with mango bbq beans again... sooo good

and then chocolate thumbprint cookies with apricot jam from VWAV... actually ate the whole bunch together with a friend. we made them with whole wheat flour and sucanat intead of sugar, so they're even more filling than originally.

Dinner: 2 Van's Blueberry waffles w/ earth balance and maple syrup, banana
