Porridge with sultanas and mixed spice.
Banana. Cranberry and coconut muffin.
Chargrilled some bits for lunch: Polenta, courgette, red pepper, tomato.
2 Clementines.
"Chicken" and vegetable curry with baked chips.
Cranberry and coconut muffin.

homemade seitan "wings" with hot sauce/earth balance glaze

sorry! I don't know the quantities. We had a recipe but it was too runny and we ended up just throwing in tons more tofu and pouring in random quantities of the rest, but it was firm tofu, tahini, garlic, lemon juice, apple cider vinegar, soy sauce and pepper. turned out pretty good.

I'm such an anorak :rolleyes: I need exact quantities and get really stressed without them! A friend was trying to tell me how to make a Jamaican spicy bean fry up the other day and she was saying "a bit of this" and "well just chuck in that" - I was almost hyperventilating with panic!!

Today:

B: Strawberries, blackberries, blueberries, kiwi, nectarine, plum

L: 4 small tortilla wraps filled w/ lettuce, spring onion, orange pepper, mushroom, vine tomatoes, asparagus, pumpkin seeds. Handful mixed nuts.

S 1: Clementine, apple, pear

S 2: Handful mixed nuts, Nakd orange raisins

D: Wholegrain rice and stirfry (mushrooms, beansprouts, carrots, white cabbage, green cabbage, onion) w/ Cauldron marinated tofu. Homemade chocolate-banana shake (bananas, soya milk, cocoa, vanilla essence, agave nectar)

Drinks: 3 mugs Rooibos tea, 1 mug breakfast tea w/ soya milk, bottled water

How much of stuff to put in?
the original recipe called for

1/2 c firm tofu
1/3 c water (maybe leave this out completely)
3 Tbs lemon juice
2 Tbs tahini (I would add a lot more of this)
1 Tbs vinegar
1 Tbs soy sauce
1 clove garlic
1/4 tsp pepper

but it needed a lot of tweaking.

Same breakfast and lunch as before, but dinner is:

Jacket potato w/ spinach, avocado, red pepper, carrot, vine tomatoes, asparagus, roasted red pepper hummous.

I started getting crumpet cravings today but am determined to fight it!

Maybe she went away somewhere for Thanksgiving?

I'm trying to stick to a meal plan this week:

B: 2 toasted crumpets with pure spread and yeast extract and a cup of green tea.
L: Leftover cottage pie from yesterday and a bowl of strawberries.
D: It will be cauliflower cheeze with sausages, carrots, broccoli and onion gravy. I probably will have a fresh mango later as well.

*mashed butternut squash
*mashed potatoes
*creamy corn & spinach
*zesty carrot bake
*baked pumpkin cheese grits
*pumpkin pie
*fudge topped cheesecake
big bowl of buttered popcorn while watching a movie
teas (white xmas, pomegranate delight, black, ginger lemongrass green, tahitian vanilla hazelnut, blueberry green, rooibos vibrations)
