yesterday:

sushi rice with peanut sauce, baby carrots
coffee w lots of soy milk x 2
handful pita chips and a couple crackers
2 crunchy taco shells filled with black beans and pintos, cabbage, onion and salsa
plus lots of leftover beans and cabbage mixed together.
popcorn with salt and hot sauce.
tempeh crab cakes on baby spinach for dinner.

Breakfast: Banana

Lunch: Vegetable soup, wholemeal baguette, 3 citrus, banana, yoghurt, choc dessert.

Dinner: Aubergine slices, marinated in lemon juice and seaweed, deep fried in beer batter, with chips and tartar sauce :thumbsup:

Battered aubergine is an ace vegan substitute for battered fish.

That sounds quite good. I wouldn't know how to go about making a beer batter. And how long do you marinate it for?

That sounds quite good. I wouldn't know how to go about making a beer batter. And how long do you marinate it for?
I just squeezed half a lemon into a bowl with a little salt and some seaweed salad, then just wiped the slices in it to make sure they were coated. A few bits of seaweed stuck to them.

The batter was just self raising flour, a little salt and cheap fizzy lager, roughly mixed until a thin lumpy sauce is made. Water or soymilk would work, too.

I dipped the slices in seasoned plain flour, then in the batter, then the flour, then the batter.

Tartar sauce was just the other half the lemon juice, plus a grated pickled gherkin, plus mayo.
