These are the BEST thing EVER when you eat them straight out of the oven. They are so delicous. Of course, they are super yummy after they've cooled completely...but. They are just ORGASMIC when they're all gooey and hot.

The full title of these cookies would be Alecia and Renee's Orgasmic Oatmeal Pumpkin Chocolate Chip Raisin Walnut Cranberry Cookies. :p

There's a long ingredient list, but they're really not difficult to make, and SO worth getting everything out. I suppose you could leave out the cranberries and raisins if you REALLY wanted to, but you MUST have the walnuts and chocolate chips.

1/2 cup Earth Balance
2/3 cup sugar
1/4 cup maple syrup
1 tsp molasses
1 cup pumpkin
1 cup flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 tsp cinnamon
3/4 tsp cloves
1/2 tsp ginger
1/4 tsp nutmeg
2 cups oats
1/2 cup chocolate chips
1/3 cup raisins
1/3 cup cranberries
1/2 cup walnuts

Preheat oven to 350 F.

In a medium bowl, cream together margarine and sugar until fluffy. Stir in maple syrup, molasses, and pumpkin. In a separate large bowl, sift together flour, baking powder, baking soda, salt, and spices. Add to pumpkin mixture, and fold in. Stir in oats, chocolate chips, raisins, cranberries, and walnuts. Place rounded spoonfulls onto cookie sheets and bake for 12 minutes. After you've taken them out of the oven, let the cookies cool on the sheet for a couple minutes and then transfer to a cooling rack.

Makes two dozen when you eat lots and lots of the dough. Which will happen. Will make about 30 when you don't. Which is difficult.
