What do I do with them?

Hmmm, If they are fairly thick ones, you could try cooking them like caramelised onions... might work?

Cut them into strips and put them in a stir fry.

potato salad a la puca is where it's at!

there are reeeeally nice spuds about atm.those cute new spuds...boiled em up..pop in some paprika.. crunchy salt, mayo type stuff and stackloads of your spring onions..if you've got engevita i'd not be ashamed to tip a generous tickle of that in also.

A traditional dish of the Irish is champ, mashed spuds with scallions. Heavenly.

Any time of year, finely chopped raw onions in mash is simply a good idea.

Over the years I've put many different things in my mash but onions is the fave.
