Don't know if there's a better name for this as it isn't quite the same as Pommes Anna but it is a favourite of mine.
Peel and slice some potatoes thinly (2-5mm / ⅛"). Brush an oven proof dish with vegetable oil and place a single layer of potato in the bottom, brush the layer with more vegetable oil and sprinkle with plenty of salt and fresh ground pepper. Repeat with each layer you add. Put in the oven on gas mark 6/7 until the top layer has browned and crispened (~30 mins).
