Courtesy of my friend who is a much better cook than me! No idea if it's her own or from a book, but she is quite creative so it might well be her own invention... This went down very well as a side dish at an omni BBQ and got compliments from everyone there.
Easy Salsa
2 handfuls of plum tomatoes
1 handful of capers (soaked and drained)
2 small shallots or 1/2 red onion finely chopped
1/2 a clove of garlic
1 handful of parsley
couple of glugs of balsamic vingar
6-8 glugs of olive oil
chilli flakes to taste
1/2 a cucumber finely diced
salt and pepper to taste
