View Full Version : Cauliflower "Cheese" Soup

I printed this off of a recipe site a few months back, just got the chance to make it tonight. It is really good, thick, and creamy!!

Cauliflower "Cheese" Soup

1/2 cup cashews (raw, clean) (I used 1 cup!)
3 1/2 cups water
2 cups cauliflower water from steaming
1/4 cup cornstarch
3 Tbsp. canola oil
1 tsp. onion powder
3 Tbsp. lemon juice
1/4 cup nutritional yeast flakes
salt to taste
2 tsp. Lawry's seasoning salt
1/4 cup dried parsley
1 head steamed cauliflower

Blend (food processor or blender) cashews with small amount of water until smoooooth.
Then blend remaining ingredients, except parsley. Pour into soup kettle and thicken on stove. That's it!

that sounds really yummy.....it sounds as though it may even make a really good sauce perhaps???

Yes, it does sound like a good sauce (I thought even broccoli would be a fine subsitute), I bought good crusty whole wheat bread for dipping into tomorrow, and also good crackers to go with it. Delish......
