Yummy, scrummy colourful winter comfort food :)

Vegetable Hotpot

You can use whatever you have knocking around to make this dish, vary it with the seasons and generally add all your favourite bits to it. Experiment and enjoy!

Thickly slice some potatoes and par-boil until slightly softened.

Slice a red onion and gently fry in some olive oil until softened. Add finely chopped garlic and sliced leeks. Sweat over a low heat for about five minutes. In the meantime finely dice some carrots and pop into boiling water until softened. To the main mixture add chopped peppers of different colours, celery, mushrooms, courgettes, whatever you fancy really. Add the carrots when they're softened (otherwise they stay rock hard forevermore!)

Make a vegan gravy (I've been using Kallo organic stockcubes, please tell me they're vegan!) and pour it over the veg mixture. Stir in some tinned (or pre-cooked) beans of your choice (a mixture of kidney beans, chick peas and black eyes beans works well), some salt and freshly ground black pepper and some mixed herbs.

Put this mixture into an overproof dish and top with the sliced potatoes in a thick layer. Brush with olive oil and put in the oven (gas 6) until browned on top.

sounds great, Snow Moon's Child :) i will have to try it soon.

i use Kallo veg stock cubes too, and i'm sure they're vegan. they're listed in the Animal Free Shopper. :)
