i just created this and it was delicious. except my bread was ricebread, and its very dry so it soaked up all the liquid, and ended up being just onions, bread and cheese lol.

French Onion Soup

Serves One

soup base:

1 onion, halved and sliced
1 cup vegetable stock
1 1/2 tsp cooking wine
1 tsp soy sauce
1 tbs flour
1 tsp sugar
1/4 tsp onion powder
3/4 tsp garlic powder
1/2 tsp dry mustard
pinch of thyme
olive oil (to cook onions in)

toppings:
-slice of toasted bread or homemade croutons
-2 slices vegan mozzarella cheese
-1 green onion, chopped

cook onions in olive oil over low to medium heat in pot, until caramelized. (i cooked mine for 45 minutes) stirring often.

preheat oven to 450 degrees.

add all ingredients to onions, and bring to a boil. turn down to medium heat and cook for a while to let the flavours blend.

pour into an oven safe bowl, top with a slice of toasted bread or homemade croutons, and place 2 slices of vegan mozzarella cheese (see felines recipe) on top. sprinkle with fresh ground pepper, green onion, and bake until bubbling and browned.

Yum, that sounds perfect for a cold, snowy today (hmm, like today). Looks like I would need a few hours to make it though. Maybe next weekend.
