View Full Version : Raw cashew nut puree with garlic/ginger/ spring onion and tahini

1 or 2 cloves of garlic
A little (1/10? 1/8?) red onion
One cup of soaked cashew nuts (soak for an hour or two)
A small handful of sundried tomatoes
One spring onion
Three large spoons with tahini (the Turkish/Lebanese etc light/running type, which is used in hummus)
Max. a teaspoon of curry
Some bean sprouts, if you have any
Some large lettuce leaves
Juice from a half lemon
One spoon of fresh, grated ginger
I used sundried tomatoes in sunflower oil and basil, if you use plain sundried tomatoes, it could be a good idea to add some basil (and a little oil?)
Add a little salt if you wish

Mash everything into a soft puree/cream using a blender/hand blender

May eg. be eaten with raw carrots and lettuce (wraps).
