triple espresso, lite soy milk

Vanilla Vega protein shake with peanut butter, cherries, chia seeds, lite soy milk

Green tea, brown rice, red rice, barley, green beans, black eyed peas, kale, spinach

Toasted wheat PBJ (raspberry fruit spread instead of jelly)

Orange Juice, green tea, whole steamed artichoke with fresh lemon juice

Toasted rye sandwich with spinach, tomato, hummus, mustard

1 piece rye bread, 1/2 cup lite soy milk, toasted wheat PBJ (whole blackberries instead of jelly)

Oatmeal with Turbinado sugar, Saigon cinnamon and freshly grated nutmeg
Corn chips with salsa
Glass of chocolate almond milk
Homemade pizza with whole wheat crust, homemade pizza sauce with lots of yummy herbs, topped with nooch, broccoli, zucchini, bell pepper, onion and mushroom
2 homemade date coconut rolls.

I tried eggplant for the very first time today. I made the eggplant, tomato and black olive pizza from Vegkitchen.com. It was a lot better than I expected it to be. I'll definitely make it again.

As a side note I substituted Vegan grated Parmesan for the mozzarella because I could not find mozzarella made without casein.

I made the most amazing meal! Roasted broccoli, cauliflower and chickpeas and then made a cashew based sauce. Truly best meal I have had in awhile. The recipe is on ohsheglows.com if you are interested!

Ginger nuts & hazelnut choc cream biscuits

Water, Irish tea, Schwepps fizzy orange

Going out to CatBar for dinner soon, which will most likely be a massive veggie burger with loads of thick-cut chips & kechup! :)

Leek and potato soup (that I made as my vegan recipe of the week - I didn't blend any of it). I used the white part of leeks, yukon gold potatoes (yum), minced garlic, olive oil and vegetable stock. And of course some salt and pepper to taste. It turned out quite yummy as just a regular soup.
Soy milk, water and tea

Not much of an appetite. Miserable with a cold.

Every recipe I have seen has had you throw it in a food processor or blender. I did not do that.

Breakfast/Lunch: 32oz green smoothie with 2 nanners, 2 oranges, 1 lime, 2c kale, 1 carrot, 1/2 pineapple, slice of ginger root and about 1/2c frozen strawberries.

Post workout/pre-church choir practice snack: Another banana

Dinner: Lentil and veggie stew and 2 small whole wheat dinner rolls.

Now I'm sipping some Yogi Tahitian Vanilla Hazelnut tea. Yum!
