Yesterday did a little experimenting for dinner.
Using what I knew about cooking eggplant, I cut it up into chunks, steamed it in water with garlic and onion and then added in some tomato sauce with italian seasonings.
I cooked up some tri-color penne pasta. Tossed it all together and topped it off with some vegan parmesan.

Turned out pretty tasty. Made quite a bit too so now I have 3 more servings in storage containers (two in the freezer for later).

Made a delicious Vegan Lasagna for my recipe of the week. I used whole wheat lasagna noodles, tomato sauce (italian herb), eggplant, yellow squash, vegan parmesan and mozzerella and a home made tofu cottage cheese.

I was going to make it over the weekend but ended up painting walls in the house instead. So since we got 13" of snow yesterday, I didn't go to work today and cooked the lasagna.

Pre-swim snack: Toast
Breakfast: Hot cross bun with peanut butter. Apple
Lunch: Salad (Lettuce, tomatoes, cucumber, onion, pickled onions, carrot, potatoes, seitan). Asda soy yoghurt. Pear
Dinner: Sausage & Baked Bean hot pot, veg.
Snacks: BBQ pretzels, Strawberry Alpen Bar, Montezumas chocolate egg
Drinks: Coffee x 4. soya latte, pepsi, water, liver detox tea
Bedtime snack will be home made banana ginger bread

- A mixture of plain and chocolate muesli with unsweetened soya yoghurt and flaxseeds
- Houmous & avocado sandwich
- Cheezly, tomato and vegetable pasta bake
- Mixed nuts & raisins, 3 ginger nut biscuits
- Indian curry with greens, chickpeas & rice

Coffee w/soya milk, water, Barry's tea (Irish tea) w/soya milk

Asda soy yoghurt.

Hello, I'm new here, so am reading mainly.
Firestorm, are Asda's soy yoghurts nice? I tried, years ago, Alpro yogs and didn't like them, but have had them recently and I actually do like them now. They have obviously improved. Wonder if this applies to all soy yoghurts.

Early breakfast: Coffee, Orange juice
Later breakfast: pineapple and blueberries
Snack: 3 oat cakes and marmalade
late lunch: small cup of spicy thai soup, banana
dinner: small plate vegetable stir fry & noodles
drinks: 1 earl grey, 1 coffee, 1 chai, 1 ltr water

I tried the Asda ones last year ago and didn't like them as much as Alpro, but a month ago I bought them out of necessity (my Asda didn't have any Alpro in stock) and they have really improved them, they taste quite creamy and I'm starting to prefer them to Alpro.
My favourites are the Sojade brand but they are hard to find (although I think Tesco soy yoghurts are rebranded Sojade as they taste identical)

Thank you Firestorm, will give the Asda ones a try and maybe nip into Tesco and get some from there too. Will have a taste test here :-)
My food today:
Early breakfast: coffee, orange juice
Late breakfast: pineapple and blueberries
Lunch: small cup of spicy thai soup
Dinner: gnocchi, olives, mushrooms, onions, sundried tomatoes with homemade pesto
Treats: dark chocolate with lavender
Drinks: 2 cups earl grey tea, 1 coffee, lots of water.
I feel so full up, as I've eaten chocolate, going to pop!

Breakfast: Homemade granola with soya milk
Lunch: Roast potatoes, parsnips, asparagus with carrots, swede and cauliflower. And a bit of mayo.
1 square of Lavender chocolate - all gone now :cry:
Then, I made a vegan fruit cake, Rose Elliot recipe, picked at currants and cherries. And ate a huge (for me) slice of cake, it was ace.
Tea: 10 olives, 5 sundried tomatoes, some vegetable crisps.
Coffee, earl grey tea, water - lots, very thirsty, been working at the sanctuary this morning, cats and ferrets, thirsty work!

Wow, that sounds amazing! Did you add the almond butter yourself or did it come with it?

It came in it!!!!!! Its part of a five pack with different fillings (Almond Butter, Peanut Butter, Raspberry Truffle, Vanilla Truffle, Caramel). They are an American company but Viva (http://www.vivashop.org.uk/viva/vegan-food/chocolates/sold-out-sjaaks-chocolate-filled-eggs) sometimes gets their stuff in.

Breakfast: Toast with Vitam-R (my addiction :-))
Lunch: Lettuce, tomato and mushroom with mayo on bread. Asda peach soy yoghurt (it was okay, thanks Firestorm)
Dinner: Taifan hotdog (cooked in the over) with roasted tomato, mash and peas. Apple crumble and custard.
Earl grey, coffee and water.
Had half a vegan creme egg, chocolate was okay but it was way too sweet, so the Fatman finished it off for me.

We had a vegan Easter feast this afternoon. It was a collaboration between my sister and myself. I made:

Tofurkey with gravy, carrots and onions
Mac and [not] cheese
Potato salad

My sister made:

Deviled tomatoes
Spicy cucumber salad
Gluten-free carrot cupcakes

It was a lovely spread, and everyone enjoyed it.
