it's stock-taking time at work and that always bores me sensless and has me reaching for the junk food. so this year I've brought in a HUGE bowl full of cut up veg and some salsa dip and a few whole raw carrots and tomatoes to munch on to keep me amused. it's doing the job so far... I haven't even thought about junk food (until now that is!).
for breakfast I had homemade oat and nut pancakes with vegan choc spread and lunch will be homemade spinach and mushroom soup (that provided I have any room left after munching all these veggies :-))
drinking coconut water and sparkling mineral water and tea.

I made chocolate ice-cream in an ice-cream maker, I think I got the recipe from the book "Lick It", and stirred in some Dandies marshmallows. You could make it without an ice-cream maker, or stir marshmallows into some pre-made vegan ice-cream (if it is available to you).

Not so well so far. All the recipes online tell you to get ice cream wafers and crush them into nuttella with some chopped nuts. I want there to be an actual shell, and thought crushed up rice crispies might work, made into a kind of cheesecake base and baked in cakepop moulds. Not a success. I'm sick at the moment so I'm still thinking of other possibilities.

If you made some wafer wet you could probably mould it.

For brekkie - freshly baked bread and plum jam with a cup of Assam with Oatley milk.
Lunch was watercress soup sprinkled with wild garlic flowers :-)
I think dinner is going to be stirfry with some of the remaining garlic flowers and stems tossed in.
There will be cider and rum drunk between now and then ;-)
