I was just thinking, has anyone tried making or heard of gluten-free seitan?

I googled a bit and found some recipes first hit (http://www.meatandeggfree.com/gluten-free-seitan.html)

It looks like something to try, I may attempt it sometime this week and post results. Though i have never made seitan (not a good cook). The big difference seems to me that you dont have to soak out the starches of the flour. Cause they are usually made of something like chickpea flours.

For any gluten free vegans with access to different flours like bean, lentil or chickpea, it could be something to attempt.

'Lo Tarek :)

Interesting way of making some tasty sounding savouries. Might have a bash at it next time I need to do some cooking!

I don't even have to try though to know that those concoctions would not have the texture or qualities of Seitan.

Have you tried any of those yet?

I was thinking the same as that blogger, that gluten-free seitan is a bit of a paradox seeing seitan is gluten.

Chickpea flour is good stuff though so it's worth a try. I wouldn't necessarily expect the results to be chewy like seitan is, though.
