View Full Version : [recipe] Homemade Sandwich Pickle

Ingredients: (Makes ~1kg/2lb)
200g Tomato
175g Malt Vinegar
150g Carrot
150g Swede
150g Onion
100g Cucumber
100g Sugar
25g Garlic
25g Tomato Puree
25g Cornflour
10g Mustard Seeds
10g Salt

Chop all ingredients finely and cook slowly in a large saucepan, stirring frequently until all ingredients are cooked and desired consistency is reached.

Pour in to sterilised jars.

I actually make this in my breadmaker on the jam setting. The recipe scales well if you want to make more and it's very easy to adjust to your own taste just so long as you keep the proportions of vegetable/liquid/sugar/cornflour about the same.

That sounds good - I must see if my breadmaker would do it although a saucepan would be OK too.

I always worry about not sterilising the jars perfectly since reading about someone poisoning themselves that way, but I suppose it's not that likely compared with other things that might happen :)

You'll be pouring something seriously hot in to them anyway so it'll sterilise itself mostly.
