I found this on PETA's site and made it last week. I loved rueben's when I wasn't veg, loved the spicy/salty tang of the sandwich which was/is provided by the sauerkraut, mustard and dressing.. Be sure to use a really low heat as to not burn the bread (like I did, so I ate it anyways and made another)

Avocado Reuben:

2 slices rye or pumpernickel bread
Mustard
Thousand Island dressing (recipe follows)
1/2 avocado, pitted, peeled, and mashed
1/4 cup sauerkraut

Spread one slice of bread with some mustard, the other slice with Thousand Island dressing.

Place the bread slices, dry side down, in a lightly oiled skillet. Top one slice with avocado, and the other with sauerkraut. Over medium heat, grill the sandwich until lightly browned and hot, about 5 minutes. Put the sandwich halves together and enjoy!

Makes 1 sandwich.

Thousand Island Dressing:

1 cup vegan mayonnaise
1/3 cup ketchup
1/2 tsp. onion powder
1/4 tsp. salt
1/8 tsp. garlic powder
3 Tbsp. sweet pickle relish
2 Tbsp. minced stuffed green olives

Blend the ingredients thoroughly in a mixing bowl or blender.

Makes 2 cups

Thank you for posting this. I was never keen on reubens when I was omni but this version looks too good to pass up.

thanks - never heard of reubens before, must be an American thing, but it sounds great! :)

I used to get a tempeh reuben from a diner in Conneticut. Thanks for this recipe, can't wait to make it.
