Applepie - do you have a recipe for that quiche? I used to love quiche... :D
Sure. I used to do one with tofu, but a friend of mine gave me this recipe using sunflower seeds for the filling and I really like it.
crust:
85ml sunflower seed oil
125ml water
250g wholemeal flour
250g porridge oats
1/2 tsp salt
filling:
800g vegetables of your choice, steamed
125g sunflower seeds
2tbsp wholemeal flour
350ml vegetable stock
parsley, chopped
yeast flakes
salt + pepper, paprika, chili (as you like)
For the crust mix oil and water well. Mix flour, oats and salt and add liquid. Mix just well enough to get a fairly crumbly mixture. Press into a pie dish and then let rest in the fridge for half an hour. Prick all over with a fork and bake at 180°C for 15min.
For the filling blend sunflower seeds, vegetable stock, flour, parsley, spices and yeast flakes. Put vegetables in the pie dish, then pour over the cream. Bake at 180°C for 15-20min.

lunch: chips & salsa, gigantic burrito (rice, black beans, salsa, mushrooms, guacamole, cilantro, lettuce, hot sauce)
snack: apple, coffee w/ f.v. soy creamer
dinner: two sandwiches (grilled hickory tofu w/ onions, peppers & mushrooms on hot dog buns), grilled asparagus. then I tried to have some chocolate soymilk that turned out to be way past its prime and left an awful taste in my mouth, so I had a warm diet coke instead.
