soy milk, white grape juice

spinach nests pasta with chunky veggie ragu and meatless meatballs, broccoli, and a lot of strawberries!

I'm about to go eat a Tofutti Cutie too. :) Dinner will come after the King Lear is over ..

Well, I got the Puffins the other day, and now I can say they're totally irresistable--like vegan Cap'n Crunch! Omigod!

I love this thread! What great motivation for eating well! Which I didn't, really, but that said . . .

Breakfast: hemp waffle, strawberries and apple slices, two bits of GimmeLean veg sausage, and coffee with soymilk.

Lunch and dinner: a mashup of tomatoes, zuccini, orange bell peper, onion, garlic, and nutritional yeast simmered until a thick stew, with red lentils and quinoa added. So good!

Snack: half a vegan brownie . . .

That other half is NOT safe . . .

And I've been trying to (and succeeding at) drinking 10 glasses of water a day. I find it really keeps my anxiety in check.

yesterday:
coffee.

small salad (iceberg lettuce, carrots, tomatoes, italian dressing).
vitamin water.

orange tofu (tofu cubes breaded and deep fried and soaked in orange glaze. naughty naughty) white rice. fried tofu. small salad w peanut dressing.
lemon ice water.

boiled potatoes with mixed veggies, earth balance, spike.

too many drinks.

today:
coffee. toast with avocado.

instant tortilla soup. vitamin water.
4 or 5 slices pizza from peter pipers-- they LOADED it with mushrooms, peppers, onions, olives, tomatoes and extra sauce.

not the healthiest coupla days... could be worse.

Today:

3 cups of coffee with Silk creamer.
2 Wildberry Buckwheat Waffles with organic blackberry jam.

1 Choc Coconut Larabar.

Small bowl of organic cherries.

About a quarter of a bag of this Cajun spiced rice cracker mix we sell at work.

Italian Risotto (thanks Mr Lundberg) topped with shredded vegan cheese.
Slices of Yves Bavarian Sausage, and fried with tomato.

Might have a Tofutti Cutie later.

yesterday...

brunch: potatoes w/ onion & green peppers, faux sausage patties, fruit salad (canteloupe, apple, kiwi, blueberries), coffee w/ f.v. soy creamer

snack: other half of the calzone from the night before

dinner: summer rolls w/ peanut sauce, pho chay (rice noodle soup w/ tofu & veggies)

after: beer, then leftover potatoes


today...

brunch: french toast w/ apple compote & syrup, banana, coffee w/ f.v. soy creamer

snack: sprite zero, a few saltines

dinner: grilled potato spears, sandwich of wheat flatbread, basil leaves, balsamic grilled eggplant, golden zucchini, baby bella mushrooms & red onion, with an amazing spread made of vegenaise, avocado, roasted red pepper, lemon juice, basil & tons of garlic

thus far, i've had:

bowl of fruit (melon, grapes, apple, banana)

leftover channa masala and wholegrain rice warmed up

more grapes

banana split open, stuffed with chocolate and peanut butter, wrapped in foil and roasted. Yum.

Dinner yet to come....

snack - lemon muffin, cup of tea
dinner - cold pizza with peppers, artichoke, olives etc, peach, strawberries, another 2 muffins :D cup of tea
snack - water...and either a chocolate ginger biscuit or my 4th muffin :o

and dinner of course but not sure what that'll be.

I just made a fantastic oat risotto. The recipe came from Yoga Journal, but I improved it by omitting the cheese garnish and adding mushrooms. Yum.

Yeah! Trust me, it was good! It was shallots and garlic sauteed in Earth Balance, oats (toasted beforehand), veggie stock, pine nuts, reduced sodium tamari, lemon juice, and mushrooms sauteed in olive oil thrown in right before serving.

I do a similar dish but less fancy: toasted oats, soy milk/veggie stock combo, peas, carrots, Earth Balance, nutritional yeast, tamari, and cayenne. Oats are really good for you. These dishes are fast and hearty.

Hmm. Sounds like it could be nice Yogini (but without the mushrooms - yuck yuck yuck).

confession: I just ate 2 chocolate ginger biscuits AND a lemon muffin. Ooh dear. I've got too much of a sweet tooth at the moment.

i could've done with more fruit and veg today, but i forgot to buy any. :o

Mesa Sunrise cereal with rice milk

banana nut granola bar

2 wholemeal pittas with chilli bean spread

wholemeal spelt fusilli pasta with tomato, baked bean and veggie sausage sauce
3 plums
some chocolate vegan ice cream

water during the day

I was going to stop posting my food intake because I feel so greedy next to some other posts - but hey who cares right? :p

2 slices of wholemeal toast with soya spread and marmite and tin of baked beans

2 bags of crisps

6 hash browns with tomato ketchup

Chocolate bar

Wholemeal spaghetti with tomato and red chilli pepper sauce with broccoli and carrots

Side salad of plum tomatoes and cucumber

Cider!:)

Oh goodness . . . today is not shaping up well at all . . . and I haven't even had dinner!

Breakfast: 3/4 cup of random oaty o's cereal

Lunch: 1.5 cups of leftover tomato, zuccini, lentil mash. At least ten choc. chip animal crackers.

Snack: a handful of minty dark choc. pearlies . . .

six glasses of water

I blame the training I'm taking. It's in the middle of nowhere Queens and there's no fridge. :( Queens makes me eat chocolate.

By all means, post Aphrodite!

RMS - Weird I posted something the other day about animal crackers. I keep hearing about them and wondered what they were?
So I assume they are always sweet crackers like biscuits?:confused:

and update to what i've eaten today: had another baked chocolate and PB stuffed banana (whoops). we had wholewheat pasta with sauerkraut, carrots, onion and garlic in a vegan cheesy sauce. This was followed by applesauce and soya yoghurt drizzled with maple syrup.

p.s. aphrodite - animal crackers are Orgran organic, wheat free, sugar free (and imho taste free but sawdust full) little biscuits shaped like animals.

I seem to recall Cadburys made/make biscuits in the shape of animals with one side coated in chocolate. Were/are they called Animal Crackers? I had those as a kid.

Oh, I guess they're not the same (http://www.nicecupofteaandasitdown.com/biscuits/views.php3?filter=126).

No I don't think thats what they are called - but I know what you mean RW - they came in a box and were shaped like animals. I used to like them - it was like animal-shaped choc-covered on one side biscuits.

I'm talking about animal crackers they always mention them in American films? Maybe they are what you said Bryzee?

I don't know why its bugging me so much...:p
