I made the best salad today.
Don't you hate going out and finding the only Vegan option on the menu is a salad? so you think 'yeah a salad would be good and healthy, why not' THEN they bring out the "salad"... some limp iceberg lettuce, with a little cucumber and tomato all smothered in disgusting oil.
Call that a salad? This is a salad!
Mesculin and Herb mixed baby salad greens
spinach baby salad leaves
alfalfa and onion sprouts
tomatoes
cucumber
celery
carrot
yellow and green capsicum
avocado
sliced black olives
sliced jalepeno peppers
mixed raw nuts and seeds, chopped up just a little bit (I used almonds, hazelnuts, brazil nuts, cashews, linseeds).
It's fanfuckingtastic, and no need for any yucky, oily, sugary dressing because the nuts, olives, and avocado are high in healthy fats, and if you use a very ripe avocado, it coats the salad like a sauce when you toss everything together.
Delish! And better still, I've got enough kick ass salad for a week.
Oh and later on I cooked up a can of chickpeas and a can of mixed beans and put some veggies with it, but the salad, it was all about the salad today, I had two massive platefuls of it. And I drank water with lemon juice as per my usual, but NOT with my meals, 'cause that is bad. BAD I tell you!

Just had a vegan "omelette" for a late lunch. Potatoes, mushrooms, onion and tomato fried and then covered in a mix of gram flour, salt, pepper and water and fried some more until it goes, well, omelettey. Delicious.
Think I'll do some kind of flan with new potatoes and runner beans for dinner but am not totally sure yet.

Toast with Tomor spread (one of the tastiest vegan margarines, in my view)
Half a bag of Sainsbury's chilli pretzel mix :o
Smoothie: tropical fruit juice, flax seeds, frozen tropical fruit chunks, a banana, fortified soya milk.
Now eating some courgettes someone gave me from their allotment, fried up with garlic, peppers, mushrooms and italian herbs, with Fry's hotdogs, cold nut loaf and boiled potatoes.
