Breakfast: smoothie with chocolate soy milk, small banana and 2 T ground flax meal

Lunch: pasta with broccoli

Dinner: pan-fried tofu and polenta slices topped with vegan "cheddar", nutritional yeast, salsa and a few tortilla chips. Carrot applesauce with fresh ginger.

Snacks: a few Newman's cookies, slice of whole wheat bread with PB

The whole day was just under 1, 500 calories. I was surprised out how good dinner turned out to be!

I'm off to take the roasted eggplant out of the oven and mix up my first baba ganoush. I've never had eggplant (that I can remember) or tahini, so this is an adventure! :)
