So far today ...

Breakfast: 1/4 cup of almonds and 1/2 liter of water
Lunch: 2 avocado rolls, 2 pieces of king mushroom sushi, and a big bowl of edamame. All washed down with an iced tea.

Still ahead ...
an apple
leftover stuffed pumpkin with mashed tatties & gravy (from thanksgiving)
a bite of chocolate

no time for cooking, basically just food on the go.

coffee + soy milk
porridge oats, cranberries, apple + soy milk

wholewheat pita filled with hummus + lettuce
banana, 2 tangerines
coffee

ryebread with yeast extract + tomato slices
carrot + celeriac salad
marzipan chocolate

L: Ryebread one with tomatoe and vegan mayo and one with lentil meatballs
D: Stirfry with brusselsprouts, squash, leeks, tofu, mushrooms and soy sauce
S: Corn snacks, candy, coke (Not the best snacks usualy eats healthier)

spaghetti with chunky veg and Meridien sun dired tomato sauce (it wasn't very god - I won't be getting it again)


i like that sauce, but i always add lots of rocket to it last minute, and top with pine nuts. it's a bit bland otherwise.

i can't believe i'm reading so many people saying "coffee with soy milk" - how on earth do you manage it?!

today i have had a small bowl of cornflakes with soy milk, plus indian take-out (veggie rogan josh with some chips). i've eaten more today than i think i have in the past week combined :eek::)

bean burrito with onions, salsa, lime juice.
root beer.
chips with salsa.

Well, let me tell ya... Every time I go to Whole Foods I try to buy something new. Today I bought a new (to me) grain, called Teff. Anyone heard of it? It's the smallest grain in the world. I followed the instructions on the package: simmer half a cup of teff in 2 cups of water for 15-20 minutes. Oh, it's yummy! It's got this nutty, bitterish taste that kind of reminds me of the aroma of freshly ground flax seeds. The package suggested adding raisins, dates and/or honey. I didn't any of those, so I decided to chop up some Granny Smith apple and mix it in. Yum! And then I decided to make some cranberry sauce and add it to the mixture. Yum Yum!

Oh, how I love being a vegan. Not only is it good for you, it's fun!

I can't wait to make it again.

Do you guys like orzo? I'm crazy about it! Last night I made it for my mom and she loved it.

Here is what I do. I dissolve cube of vegan bouillion in 1.75 cups of boiling water. Then I add a mixture of orzo and red lentils (washed and rinsed, of course). I reduce the heat to medium low. It's all ready in just about 7 minutes. During the 7 minutes, I chop up some leaks or green onions, kale, mushrooms, cashews (or pine nuts) and sautee them all with some vegan butter. I add a couple of Boca vegan burgers, broken into small pieces, to the mixture.

And there you have it. It's yummy! Plus, it's high in protein, fiber, complex carbs, calcium (from the kale), and monounsaturated fats. The vegan bouillion is a little high in salt, but hey, I don't care. I could use the low-salt bouillion, but I know myself, I'd end up adding salt anyway...

i can't add soy milk to coffee without it curdling. i buy dairy-free coffee whitener instead but it is too expensive to nurture a coffee addiction this way!

i always drink soy in my coffee... i dont really care if it curdles, i just stirr it more if it does.

I've never heard of it. I'm thinking of going over to Wholefoods (on the other side of the city) next week, so I'll have a look for it there.

Tonight we went out for dinner and I had a Portobello Mushroom Burger. It was very plain and bland - I could've made better myself at home. The sweet potato fries that came with it were REALLY good though!! I also had a Mojito to drink :)

Then because they didn't have any vegan desserts, we went to different restaurant for dessert. I had a soy Mocha late and a piece of vegan chocolate raspberry cake. Yum!

I am going to end up a heffalump if I keep eating as much rubbish as I have been !

Yesterday:
Weetabix
2 slices toast with yeast extract
2 bagels with yeast extract
Chocolate marzipan bar
3 squares mint chocolate
Soya mince pie, sweet potato, broccoli, sweetcorn, caulifower, carrot

Today, so far:
Bran flakes
1 slice toast with yeast extract

Later will have:
veggie dunkers, potato wedges, gherkins :o

breakfast: coco krispies w/ rice milk, half a grapefruit

snack: celery & pb

lunch: stuffing, green beans, wheat crackers w/ roasted butternut squash dip

snack: strawberries, coffee w/ f.v. soy creamer

dinner: veggies & thickened broth over brown rice

snack: popcorn, diet partner tea

It seems that it is a very good source of fiber, calcium and especially iron!

I made it again this morning. I sweetened it with Stevia and added apple and cranberry sauce. Delish! And the good thing is, it does not leave me feeling hungry, like oatmeal. It ain't cheap - the package I bought at Whole Foods was over $5. But hey, variety is the spice of life, n'est-ce pas?

BREAKFAST:

Bowl of chocolate porridge.

LUNCH:

3 Bourbon biscuits.
Pitta filled with carmelised onions, home made houmous and lettuce.
Soya Yoghurt.

DINNER:

Linda McCartney country pie with veg.

Some more bourbons.

And hopefully there will be more to come later on. I am proud of myself today, this is the most I have eaten in one day for about a month or so :)

fries/chips w seasoning salt and ketchup (try to avoid such things, but couldnt resist)

for lunch/dinner I bought a pint of split pea soup which i will eat with ww rolls, and pint of silk soy chai.
