Mmmm - that sounds nice. Was it like a curry?
Not really. I don't know how to classify it. It's a recipe a friend of mine brought back from Kenya where she was working for 6 months. Basically it's a very thick sauce consisting of onion, tomatoes, lots of coriander, a chili, thyme, oregano, salt and pepper. It was the first time I had plantain, and I really liked it.

White bread roll with Pure spread, Plamil mayonnaise, Cheatin' beef slice, half a small avocado and baby spinach leaves.

Wholewheat pasta with roasted vegetable sauce. Salad leaves.

BREAKFAST:

Bowl of porridge with unsweetened soya milk, a whole bananna and a little golden syrup

LUNCH:

Two sandwhichs - 1) wholemeal bread, dairy free spread, iceberg lettuce, polony slices, chilli mayo and tomato burger relish
2) Wholemeal bread, organic peanut butter (crunch of course) and strawberry jam.

DINNER:

Releat mince and chopped tomatoes with BBQ flavouring. (Only had a coupla spoon fulls as wasn't really hungry last night!)

I made this thread about kale theres a lot of very good looking recipes... When i get a huge celeriac I often make mashed root vegetables
400 g potatoes
200 g carrots
200 g celeriac
3 cloves of garlic

You just peel and dice the vegetables and boil in water with garlic until tender.. Then mash with the boiling water or soymilk and a little margerine and salt... So good

I bought some organic apricots - they are very different from the 'normal' dried apricots i buy they just taste of sweetness where the others taste of ........ apricots. Weird!:o

are they brownish with a caramel-toffeeish kind of taste? they're very intense aren't they? the orange ones are orange as they'll have been treated with suphur/sulphites or something.

yes I thought they were dates to start with and then realised the difference. Perhaps I need to re-try them. I went to Holland and Barrett and bought dates, apricots, organic raisins, hazel nuts, brazil nuts pumpkin and sesame seeds and so when I got home I just went into gorge mode and stuffed everything in my gob to try it all.:o

Thats a very healthy food binge though vava.:)

So far I have had:
Toasted bun with 2 veggie sausages and ketchup and mayo

6 crackers with mayo, yeast extract and sliced tomatoes

Big bowl of lentil and carrot soup (I must have this at least 5 times a week)

I'm going to have potato wedges, veg and gravy for dinner later

2 cups of tea and lots of water

yesterday I only had a bagel and a couple bites of chickpeas.
This morning the bf made breakfast. He's really a nice fella :p

3 buckwheat pancakes with pure maple syrup
large helping steamed broccoli, cauliflower, carrots with nutritional yeast 'cheese' sauce on top
baked marinated tofu
homefries

i'm stuffed :D

Today:

1 cup of coffee with vanilla soy milk.

1 Vietnamese fresh spring roll.
1 Vietnamese BBQ "pork" roll.
3 cups of green tea.

1 and a half BLT sandwiches: organic wholewheat bread, organic mashed avocado, organic tomato slices, Yves veggie bacon slices, organic mixed leaves, ketchup.
A few plain potato chips on the side.

1 cup chocolate chai tea.
2 french pastry twists.
1 dinner mint.

I started out sooooo well yesterday and then it all just went to pot and I ate aload of crap...although very tasty crap hehe!!

BREAKFAST:

Peas, carrots, green beans and onion in a chopped tomato sauce with a few nuts added in and a large amount of iceberg lettuce.

LUNCH:

TWO WHOLE LARGE bowls of chocolate brownies and swedish glace (my gf wanted to make a cake so I didn't complain)

DINNER:

Got to the club and realised I hadn't eaten anything so went and got a BIG bag of chips with LOADS of ketchup! :eek:

Yesterday:

Lunch: Cape Cod Cosmopolitan. Mojito. Baked potato and beans. Salad (salad leaves, cucumber, cherry tomatoes).
Dinner: Two Linda McCartney sausages. Roast potatoes. Stuffing. Broccoli. Peas.

Handful of Almonds and Macadamia Nuts

Trying to be healthy!!!!!!!!

If anyone has got any ideas as what to do with a big bag of kale and a huge celeriac then tell me my lovely vegan friendies!!!!! lol
Either toss the kale in lots of oil and roast for approx 10 minutes until slightly brown and crispy(keep checking as it cab burn very quickly)or stir fry it with lots of chopped onion and crushed garlic and add to mashed potato and add soya sauce.
Celeriac is yummy chopped and roasted or boiled and mashed with spuds.

yesterday...

breakfast: smoothie (banana, strawberries, mango, kiwi, oj, flax meal), green tea

lunch: chickpea cutlet w/ ketchup, mashed sweet potatoes, steam-fried mushrooms, sauteed cabbage

snack: apple

dinner: salad (mixed greens, red pepper, mini cucumber, corn kernels, oil & vinegar), roasted okra, 2 slices wheat bread

Breakfast: Banana, apple, plum (usually have cereal but ran out of soya milk).

Lunch: Lentils, brown rice, spinach and Lloyd Grossman curry sauce - I am currently obsessed with this dish it's so yummy.

Dinner: Same as lunch:)

I wasn't going to post what I ate yesterday because my breakfast and lunch were so bad, but I made up for it by going to a Thai vegetarian restaurant for supper!

Breakfast: whole wheat bagel with Tofutti cream cheese

Lunch (at work's cafeteria :(): white mushroom rice and green peas (they wouldn't even let me have potatoes because there was only enough to serve with the meat entrees. Well if they had a vegetarian entree I would've gotten it with the potatoes!). Bag of regular potato chips and pop :o

Supper (Thai vegetarian restaurant!): spring rolls with sweet chili sauce, green "chicken" curry, sauteed "chicken" with cashew sauce, "shrimp" pad thai, jasmine rice, and bananas in warm coconut milk for dessert :D

L: warm baguette with melting 'mozerella' and salad

T: homemade pizza...tomato sauce, spinach, fresh tomato, pinenuts and more melting mozerella...

Some cherries
And will snack on more fruit later

BREAKFAST:

Baked beans, two grilled tomatoes and a hash brown (works canteen)

LUNCH:

Well he called it Ratatouille but it was - courgette, red and yellow pepper cut up and put in a tomato sauce. I ate it with lots of rocket but it was in essence pretty crap! (works canteen)

DINNER:

Mince and veg medley ( Mince, chic peas, kidney beans, onions, peas, carrots and green beans with chopped tomatoes) with "cheesy" onion and herb potatoe bake. ( Waffles covered in soya milk with cheezley and raw onion sprinkled on top....comes out like cheezy mash...whoop!)

Today (well yesterday I guess lol, because it's 12.30am):

2 cups of coffee with vanilla soy milk.
2 pieces organic wholewheat toast with chocolate peanut butter & mashed organic banana.

1 bowl Optimum Zen cereal with vanilla soy milk topped with organic fresh blackberries.
1 cup Echinacea tea.

Home-made organic "chicken" pasta salad: veggie spiral pasta, orange pepper, green pepper, cherry tomatoes, celery, Yves ground "chicken", poppyseed dressing.

1 Amy's non-dairy burrito.

2 dinner mints.
