Lunch:

Winter soup (out of a flask at a demo) - two hot dogs chopped into little pieces, carrots, brocolli, kale, spinach and alfala sprouts in vegetable stock!

Dinner:

Got back from demo really really late as I missed the bus. I was thinking of having a stirfry all the way home, but ended up having a bowl of shredded wheat and unsweetened soya milk instead.

You're doing better than I was, COT. I couldn't even open my mouth to bite foods for a whole week!
Ooooooh ouch!
I was determined to eat something solid, lol. I'm regretting it slightly - the acidic tomatoes in combination with my less than perfect dental hygiene (due to the soreness...it's hard to brush 100% properly) left me with some canker sores on my lip :(
That didn't stop me from eating half an orange this morning at breakfast, lol.

Fridays are weird. I have class from 11:30-3:20, so I have breakfast, then 3/4 of lunch in place of my morning snack, a snack and 1/4 of lunch at lunch time, then normal after that.

B: Half an orange, 1/2 cup oatmeal with soymilk, 2 cups of coffee with soymilk.

L: Tofu scramble with mushrooms and onions, a tiny bit of steamed green beans & 2 slices of veggie turkey on the side.

S: 1/2 cup mixed grain cereal, 1/2 cup applesauce.

S: 1/2 cup black beans.

D: Mushrooms, grape tomatoes, cucumber and crackers with hummus.

Edit: School is cancelled due to a blizzard, weeee. I'm still going to eat in that order though, because I'm exercising before my early lunch which means the protein will be needed then :)

lol
I think I'm going to try sticking to soft foods a bit longer, actually. I ate some cereal and it just wasn't pretty. My mouth has far too many sores for anything crunchy or acidic =/.
I'm skipping the tomatoes and crackers at dinner! I'll just have the mushrooms, cucumber, hummus and maybe the black beans then too...mushed.
*sigh*
Oh well. Hopefully the canker sores go away soon. I found another one, wayyy at the back of my mouth. Gross.

Mouth is still hurting a lot. I can't have anything solid, hot, spicy or acidic :(.
I was getting upset - my mom is away for a month, and although she left me with grocery money, I had stocked up on vegetables. They were just sitting in my fridge and I was starting to worry that they were going to go bad before I could eat them. So anyways, I came up with solutions today...

Breakfast-Oatmeal made with water, added a little soymilk. 2 coffees with soymilk.

Breakfast part 2-Plain tofu scramble

Then I went nuts because I miss vegetables, so I made soup with organic vegetable broth, organic carrots, purple cabbage, green peppers, mushrooms, onions, black beans and lentils. I cut up most of my other vegetables and froze them (except the tomatoes and salad greens)

Lunch-Bowl of soup with a bunch of little crackers. 1 tsp organic cool hemp chocolate 'ice cream', 1 tsp organic peanut butter, 2 tsps organic cool hemp maple 'ice cream'.

Dinner (the kind of dinner that makes an omni say "what?")-Smoothie: 2 cups organic baby romaine, 1 mini cucumber, 1 tbsp organic rice protein, 1/2 cup frozen blueberries, 1/2 cup almond milk. Bowl of 1/2 cup TVP cooked with 1/2 cup boiling water. 1/2 tsp organic peanut butter, 1 tsp cool hemp maple, 3 frozen banana chunks with 1/4 tsp hemp seed butter.

Lots of water & some herbal tea.
Might have Green & Black's organic dark hot chocolate... Hmm.

Breakfast - Well, I slept in and felt sick after last night's party... so nothing.

Lunch - something different finally!: :D
-- about 1/2c Jasmine Rice with golden flaxseeds and red quinoa
-- about 3/4c black beans
-- 1/4c chopped celery
-- 1 plum tomato

Snacks - throughout the day:
1-- 2 tbsp. organic crunchy peanut butter
-- 12 baby carrots
-- Yogi echinacea tea

Dinner - probably:
-- about 1/2c Jasmine Rice with golden flaxseeds and red quinoa
-- about 3/4c black beans
-- 1/4c chopped celery
-- 12 slices button mushrooms
THEN 3-4 Heineken Light (I just found out this is vegan!):D

This is the last of the veggies and I've got no fruit in the apartment! I'm going insane without my car.:(

You're not making me drool without sharing the recipe, are you? ;)

Sorry for not getting back to you sooner applepie, but here is the link: http://www.invinciblemuffin.org/vegan_cheesecake.html

That is for a regular cheesecake. To make it chocolate mocha, I just make a cup of extra strong coffee (like triple strength) and then cool it down in the refrigerator. I use that instead of the water, and in fact usually add somewhere between 1/4 c and a 1/2 cup to really taste the coffee. I also melt vegan chocolate chips and just add those too taste in the food processor. I also go ahead and process the chocolate and the coffee/egg replacer with the rest of the batter instead of "folding" it in.
Its absolutely delicious!

I tried Soyatoo whipped "cream" on it before also, which is great, but it is good enough on its own.
