OMG - Mango chilli sauce sounds divine!!
ooh yeah its awesome. we serve it at the restaurant I work at. With the exception of three of them, all the sauces we serve are vegan, too! :)
But since I was too lazy to go to the restaurant to get food (I don't work today), I had this for dinner:
-- the weirdest salad ever- 3/4 bag of baby spinach, 4 slices roasted red peppers, 1 tbsp garlic, 2 tbsp salsa, 4 tbsp spicy mustard, 8 or so green olives, 1/2c chickpeas
-- an amy's bean burrito
I think I was just going through all the crap in my fridge and started putting stuff on my baby spinach until it was nice and spicy and salty... can you tell what time of month it is?! I always crave salty foods!:p

Breakfast: 100% organic green smoothie of strawberries, banana, fresh pineapple, apple juice, and a handful of spinach.
Snack: snickerdoodle cookie
Lunch (I was in a hurry): whole wheat bagel, 1/2 with tofutti cream cheese, 1/2 with coconut oil and fruit spread.
Supper: green curry made with broccoli, cauliflower, carrots, red pepper and fresh pineapple.
Dessert: another snickerdoodle!

Steamed broccoli.
Bowl of lentil soup with lemon juice and one chopped carrot and coriander sausage.
Hummus and raw spinach sandwich on wholemeal bread.
Two clementines. One cup of chamomile and limeflower tea.
One cup of African spice rooibos tea.
One fried mashed potato cake with ketchup.
One cup of rooibos tea.
Bowl of lentil soup with lemon juice and two chopped carrot and coriander sausages.
It's weird, I thought that looked like quite a lot of food, but I added it all up and it only came to about 1100 calories.

I made two awesome things on Sunday! I made a batch of blueberry pancakes from a recipe that I found on here a while back and loved them. Even my brother (who is not vegan and actually sort of critical of how most vegan foods taste) loved them and ate like three for breakfast. In the afternoon I made the brownie recipe from postpunkkitchen.com and ate them during the Super Bowl. They were spectacular. My whole family loved them and half the batch was gone by the fourth quarter. I was so happy with both meals - not only because they resulted in some good eating for me, but also because they demonstrated to my otherwise skeptical family how amazing vegan food can taste. That's always a satisfying thing!

Edit - this doesn't seem like a massive amount of food - or maybe I am just a pig but according to fitday there are just shy of 2000 calories here and half of my calories today have come from fat!:eek:
The nuts, seeds and coconut are all quite high in calories and fat. It's good fats though.
If you're worried, just try eating less of them tomorrow.
Today:
2 cups of coffee with vanilla soy milk.
Scrambled cheesy tofu on a breadroll.
1 Smart Monkey carob energy bar.
2 organic tangerines
Homemade organic pasta salad: wholewheat rotini, Yves veggie chicken strips, carrot, red pepper, celery, tomato, poppyseed dressing.
A whole bag of organic microwave popcorn with powdered sugar sprinkled on it.
3 squares of Sjaak's dark chocolate raspberry bar.

BREAKFAST:
Bananna, mango, coconut milk and flax oil smoothie
SNACK:
Handful of mixed nuts
LUNCH:
Tofu, onion, garlic and sweetcorn in a bbq marinade over baby spinach leaves and romaine.
DINNER:
Wholemeal pasta with chopped tomatoes, homemade meatballs (see told ya I was gonna make some hehehe), fresh basil and homemade wholemeal garlic bread.
(I feel asleep straight after cuz I had a massive headache for no imparticular reason which was very naughty of me cuz now all those carbs are sitting on my belly lol...should go for a run this morning or something!)

B- Berry Cheeky Nakd Bar, Banana
L- Chestnut spread & banana sandwich
Salad (lettuce, celery, cucumber, cherry toms, carrot, pepper)
S- Apple, Alpro Toffee Soya Dessert
D- Wholewheat pasta with pinto beans in a fresh tomato sauce & nutritional yeast.
Steamed baby corn & sugar snap peas
S- Two weetabix with oat milk
Water, tea with oat milk x1
How does everyone get by on three meals a day, no snacks? Apart from when I'm really ill (like flu or something) I'd be starving with no snacks :(

I'm usually the same way, Skylark. I think it's because usually if I eat large quantities of food I end up feeling too full and often a bit sick, but if I eat the amount of food that my stomach is comfortable with I have to eat more than three times a day to get enough calories. Eating little and often is supposed to boost your metabolism and be the healthiest way to eat anyway.

-Too many 10-grain pancakes with walnuts, banana slices, maple syrup and 2 yves veggie sausages. 2 cups of coffee with soymilk.
-1/2 tsp peanut butter and 3 tsps applesauce (I still think I have hypoglycemia...I didn't eat for four hours and for the last hour felt very faint. ran to the fridge and grabbed a quick snack)
-big bowl of lentil vegetable soup, an apple.
-slice of whole wheat toast with 1/4 avacado. 1 dried apricot, 1 fig, 2 dates, 1 kiwi.
-salad: romaine, cucumber, red peppers & 2 slices of yves veggie turkey w/olive oil & balsamic vinegar

Bit low on veggies today, but out all day and relying on food to eat in 5-minute breaks between lectures.
