yesterday i had:

what i like to call my 'power porridge' made with soya milk, cinnamon with sunflower seeds, flaked almonds, ground flax and hazelnuts and a wee bit of sugar over the top.

lunch was kale, bok choi, cashew nut and seasme seed stir fry on brown udon noodles

dinner was three tempeh and white bean sausages from vwav (loving this books) with a potato, kale and mayola salad type thing and a small bowl of carrot soup. i was hungry :D

oh, and a hot cross bun at some point with a cup of tea. i think in the afternoon :D

Trying to make sure I get at least 1,200 cals, at least 240 of which from protein...today is only 1,064 cals total, 245 from protein.

I've been dividing my meals as: 1/2 plate non-starchy vegetables, 1/4 plate starch (grain, fruit or starchy veg), and 1/4 plate protein. Snacks can be whatever.

B: Toasted whole wheat bagel, 2 slices yves cajun veggie chkn, 1c romaine and 1/2c diced tomato. 2 cups coffee w/almond milk. (308 cals, 16g protein)

S: Rice protein mixed w/water, large apple. (185 cals, 12g protein)

L: 2 slices yves cajun veg chkn, 2 tbsps hummus, 10 baby carrots, 1/2c yellow pepper, 1/2c celery. Blueberry green tea. (180 cals, 10g protein)

S: Strawberry Yoso soy yogurt. (150 cals, 5g protein)

D: "Rotini & Cheez" - 1/2c flax-omega-3 rotini pasta, 1/2c soymilk, 4tbsp nutritional yeast, 1/2c broccoli, 1/2c cauliflower. (241 cals, 18.5g protein)

Sounds like a lot of food! Maybe I'll treat myself to a G&B's organic dark hot chocolate made w/soymilk to add an extra 150 cals.

I don't think Nutella is vegan Aurore!

Aurore's in Paris, i had this discussion with my french penpal the other day when she asked me if i liked nutella. In France they call all chocolate spread 'nutella' regardless of the brand. I think that's what she means anyway!

Ooh, that spaghetti looks good Melanie!

I have a cold today, so I didn't eat very well:

Breakfast: homemade granola with soymilk and a sliced banana on top

Snack: a chocolate almond macadamia square. I shouldn't have eaten this, having a cold and all, but it was too good to resist!

Lunch: homemade carrot soup with piece of pita bread.

Snack: another chocolate almond macadamia square :o :o :o

Supper: will be a salad with lettuce, tomato, cucumber, artichoke hearts, palm hearts, and an oil/vinegar dressing.
