I'm not the healthiest person as I don't have the time to cook, but...
Dry bran flakes as I still haven't found a milk I like!
Pasta and a tomato sauce, with 'parmesan'
'Chilli con beans' (my own concoction) with a smidgen of rice and a jacket potato, nice and spicy!
A chocolate fairy cake. Well, it was supposed to be one but it multiplied into four! Maybe 5... (I think I might get my hubby to hide them now)
Gosh, all your amazing menus and I eat such rubbish! To be fair my diet was far worse when I wasn't vegan. Mainly consisted of jelly sweets and chocolate - serious sugar addict here.

there is no such thing as "no time to cook"... no time to whip up a four-course meal, but not no time at all :)
Anyway, it looks like you cooked a fair bit!
pita bread with hummus, mixed greens and tomato
an apple
bento: sushi with brown rice and cucumber, plus soy sauce, ginger wasabi and ginger
another apple and raisins
a banana
Japanese curry with carrots and potatoes, plus rice
I feel like having some nibbly food...
