*drool* ....might there be a recipe for those Ruby? :)
they didn't turn out looking very pretty (the cheesecake fell and left big holes in the middle) but maybe you'll have better luck. I'm not a baker, but they tasted good anyway!!
1 8oz pkg vegan cream cheese
1/4 c mashed silken tofu
1/3 c sugar
pinch salt
1 c sugar
1 1/2 c flour
1/4 c cocoa
1 tsp baking soda
1/2 tsp salt
1 c water
1/2 c oil
1 Tbs vinegar
1 tsp vanilla
makes 18 cupcakes.
preheat oven to 350 F
combine 1st 4 ingredients in small bowl. set aside.
in a large bowl, mix remaining ingredients well.
line muffin tins with paper cups. fill each cup 1/2-1/3 full. Drop spoonful of cream cheese mixture into each filled cup.
bake 20-25 minutes.

I used to be really into it too. Unfortunately the last time I had it, it was very disappointing. Made me quite sick actually.
RachelJune has some great recipes over in the South Indian recipes thread though, and I can highly recommend them. :)

You might all notice a Larabar pattern to my day  They've just been so convenient cos I've been busy :) Not addicted, honest.
Breakfast: Larabar (banana cookie)
Snack: Larabar (cinammon roll)
Lunch: Udon noodles w/ peanut sauce from VWAV (again, recommended - tastes great). Larabar (lemon pie). Bowl filled w/ strawberries and diced plum. Nakd cherry flavour raisins.
Snack: 3/4 of a large bag of mini poppadums :o
Dinner: Will be fettucine alfreda from VWAV, topped w/ sauteed asparagus, red pepper and some mushrooms I need to use up. And for dessert the last of the strawberries, the last of the cherries and a pear.
Need to go shopping tomorrow...
