A good day always involves Swedish Glace

I've been using scoops of the Neapolitan one on top of chocolate-banana shakes and it is really delish!

I've been away for team leader training (for my job as a student mentor). We were staying at a really posh hotel and I was quite impressed with their ability to cater for vegans - possibly the best vegan meal I've had at a non-vegan place!

yesterday:
plenty of coffee
caramelized carrots, courgettes + aubergine from the lunch buffet, and a breadroll
3-course dinner: for me they came up with 3 types of melon, rosemary potatoes cooked with various veg (peppers, carrot, cabbage) and nicely seasoned, fruit salad with the greatest variety of fruit I've ever had

today:
plenty of coffee again
banana
ratatouille + a breadroll from the lunch buffet
3 bourbon creams
now munching on a late "supper" of muesli, apple + rice milk

Breakfast: Larabar (Key Lime Pie).

Snack: Larabar (Pistachio).

Lunch: Stir fried veggies (yellow pepper, red pepper, green pepper, celery, cherry tomatoes, pine nuts and a few other bits n pieces which I forget) w/ coriander basmati rice. Nakd lemon flavour raisins.

Snack: Larabar (Cherry Pie).

Dinner: Tortilla wraps filled w/ Plamil mayo, lettuce, spring onion, asparagus, mushroom, pomodorino tomatoes, yellow pepper. Bowl filled w/ strawberries and cherries. Homamade chocolate-banana shake.

My first taste of it was pretty disgusting, tis true :)

But apparently the way it is marinaded and prepared has a BIG impact on the texture and taste (and you can also buy pre-flavoured ones that are supposed to be nice).

Anyway I tried again with some home-smoked tofu in a salad at a restaurant and it was really delicious, tasted nothing like the other lot.

Keep experimenting! :)

yesterday I had time and ambition to spend some time in the kitchen :)

bowl of cereal with soymilk
2 apples

3 slices of banana bread

potato salad with arugula and peppers, one of five recipes from Vegan Fire and Spice I've tried over the last couple of days- there hasn't be a single recipe in that book that let me down so far!

then had a friend over and had:
- more banana bread
- more potato salad
- leftover pappa di pomodoro, made with homemade sourdough bread
- seitan BBQ ribz on homemade burger buns (both from vegweb)
- piri piri tofu
- a bottle or two of red wine :)

we might as well be pregnant :o
well at least I feel like eating and can taste something for a change!

Hello! :) (your day looks quite healthy and yummy to me.)

So far:

Marinated olives
Doughballs
Pizza with red pepper and more olives
Crisps

Pomegranate juice, coke and water

I bought some tartex pate earlier so probably will have that with w/m bread later not sure what else. I have a weird combination of veggies left over, a sweet potato, a parsnip, a yellow pepper and some chillies, not quite sure what I can make out of that! :dizzy:
