Wow Julilla, I've never seen tagliatelle that's egg-free! Lucky old you *is very envious*

@fiamma: Actually I've seen lots of egg-free tagliatelle in german supermarkets and my local organic food shop. Seems to be more common than "original" tagliatelle with eggs. :) It's strange that you can't get its vegan version in the home country of pasta. :(

It's no big deal - I'm not a huge pasta fan - but it is strange as you say that it doesn't seem to be available here in Italy. I did find some egg-free lasagne, and I thought I was doing quite well :D
Your pasta night sounded great.

Thanks fiamma, it was great, but afterwards we were even too stuffed to clean the kitchen. ;)

Wow, that sounds amazing! Especially the ravioli filled with spinach and sundried tomatoes. Mmmmmm :)

LoL, must use that as an excuse next time my OH gets on at me about the cleaning :D
Today I had:
A few crostini with apple and pear spread
Banana
Coffee
Lunch was coconut curried veggies with kidney beans and chickpeas
Small piece of veggie-filled focaccia made by a friend
2 peaches
Plain soy yogurt with agave and walnuts
More coffee
Dinner will be black bean and tempeh chilli

Thanks Est!
The ravioli were a bit of an experiment. Actually we wanted to fill them with mushrooms, but as we didn't find any decent ones, we decided to use frozen spinach instead. (fried it in some olive oil with chopped sundried tomatoes and seasoned it with salt and pepper in the end) We were amazed how good it was.

Breakfast - Banana, satsumas.
Lunch - miso soup and (around 5 oz dry) quinoa.
Dinner - Sweet and sour veg (beansprouts, carrots, sweetcorn, peas, tomatoes, courgette) with rice noodles and hijiki seaweed.
Snacks - salt and vinigar crisps :o, dried fruit.
Drinks - pineapple juice, water, cola.
If I'm right with my calculations that will mean I'll have 4 fruit and 6 veg (I count tomato as a salad veg lol) as all are enough as a portion that are mentioned . So that's 10 lol, that beats the 5 a day they say you should have by double . There is omega 3, 6 and 9 there and I think the fruit, veg and seaweed cover most other minerals and vitimins. I bet I'm missing something though. Any help would be lovely. I really want to make it so no tablet suppliments (sp?) are needed as I forget them so often.

crazy 4 veg - looks good but one idea is to include more leafy green veg, such as cabbage, kale, watercress, spinach, which are probably worth having most days because of the calcium and other good stuff in them (although I see you had Brussels sprouts and cauliflower yesterday so you're doing pretty well there too!)
Today I had
breakfast: walnut bread, toasted, with Natex, peanut butter and pumpkin seed butter (not all together :p). Salad sprouts. An orange and half a pomegranate.
lunch: rice cakes with homemade hummus, tomatoes and cucumber. An apple, a Medjool date and a dried fig.
dinner: I'm planning to have melon, then pasta with broccoli, red pepper, runner beans and vegan pesto, then blueberries. Better get cracking.

Ah yes calcium. Now that is one I really should look at. Thank you Harpy for that. Will add more spinich, cabbage etc to my days I think :D. Can't let my bones suffer  .
RubyDuby I do hope you get better. Good food really does do wonders! Make sure you are getting enough minerals and vitimins from your foods so that you get over this. All the best to you.

crazy 4 veg, I should have mentioned that the calcium in spinach is supposed to be less well-absorbed than that in other green vegetables such as broccoli. You probably know this already but it's discussed on various websites such as http://www.vegparadise.com/calcium.html
Spinach is still good stuff though!
