Started off yucky...just had a coffee drink I mixed myself (which I had been avoiding caffeine aside from the occasional tea or chocolate until now):

12 oz. coffee,
6 cubes soy creamer (french vanilla - I froze the creamer in an ice cube tray)

Then I didn't eat until lunch. I had meant to start off with a fruit smoothie, but oh well.

Lunch: bean soup, tofu with veggies, bean mixture dish. Lots of beans!

mid-meal: smoothie
2 oranges
1 lemon
1/2 banana (frozen)

Dinner: pasta with sundried tomatoes and olives, barley, more bean soup.

After dinner snack: strawberry soy yogurt.

Unfortunately there's not much variety of fruit on campus; just bananas, oranges, and apples basically. Can applies do smoothies? I don't think I've seen it before. Maybe I'll get a smoothie with two bananas and two oranges, or three oranges, or a banana and a half and three oranges. Not very interesting, but a good way to get fluid and vit. C in the morning, particularly as I'm sick.

3 slices of toast with pure and blackcurrant jam
Green tea
Small packet of kettle crisps
1/2 a melon
Banana
Can of diet cream soda
Vegetable curry with mango chutney
Lettuce and tomatoes with apple cider dressing

I will probably have another stir fry for dinner as I bought 3 bags of bean sprouts as they were on offer and my hubbie doesn't eat them so it looks like I will have to. They are really big bags too.:dizzy::D

mache green salad w/ tomato, salsa, shiitake mushrooms, + black beans
sunflower seeds
cup of orange juice

1/2 a gingerale

chili w/ shiitake mushrooms
couple slices of avocado
cup of orange juice

(apparently they had the foresight to make vegan sloppy joes - yummy by the way - but not to get vegan buns! What are they doing, putting us on vegan Atkins or something??? Oh, boy. Was still quite tasty, but still. Normally I pile on a ton extra veggies like mushrooms and spinach and raw onion and stuff.)

teriyaki tofu w/veggies
carribbean cocconut rice and beans
lots of steamed veggies (broccoli, carrots, green beans, etc.)
red beans (very small portion, like two table spoons!)

I also had some soy delicious ice cream through out the day, green tea and mocha almond. Yum! But so not so good!

2 packets of instant oatmeal made with vanilla soy milk.

5 cups of coffee.

1 veggie & tofu roll.

2 glasses of wine.

1 vegan brownie.

I'm obsessed with jam lately. I want to try some new flavours.

2 slices of toast with pure and blackcurrant jam,
1/2 a melon,
An orange,
A banana,
A packet of crisps,
Stir fry - broccoli, yellow pepper, bean sprouts and red chilli with peanut sauce, it was yummy,
2 diet cream sodas, green tea and lots of water,

I am going to have carrot and lentil soup for dinner later and probably some bread.

br - a banana and an apple. Vanilla rooibos tea.
snack - marzipan cake. Barleycup.
lunch - soup and some crackers. And barleycup.
another snack - a tangerine and more cake. And even more barleycup.

For dinner I'll probably just have more soup. It's parsnip, onion, carrot, potato and jerusalem artichoke flavour :D Or maybe I'll have pie, potato waffles and peas.

what's fennel-chickpea tuna salad sandwich please?
it sounds so good!

I just made the chickpea "tuna" salad recipe from Vegan Deli and added a bunch of chopped fennel frond. If you want the recipe, PM me and I'll type it up when I'm at home.

yesterday...

breakfast: two pieces cinnamon raisin toast w/ cacao bliss spread (chocolate & coconut butter), an orange, chai tea

snack: banana

lunch: tofurkey italian sausage w/ radicchio & caramelized onions, polenta w/ beet greens, baby carrots w/ hummus, grapes

snack: chex mix, diet coke

dinner: shredded beet salad over leaf lettuce, cheesy broccoli & rice casserole, mustard & leek potato salad, a hot toddy

banana.
chick pea noodle soup.
veg medley burger on whole grain roll.
coupla glasses cranberry cocktail.
1/2 can 3 bean salad. won't buy that again...
edamame.
coupla screwdrivers.
gardenburger chicken griller quesadilla with peppers, onions, fyh cheddar and sun dried tomato tortilla. topped with salsa. yum


so far today:

coffee.
1/4 container purely decadent turtle trails ice cream. (omfg yum)
french bakes. (vcon)
veg medley burger on whole grain roll with onion, pickle, vegenaise, mustard and ketchup.
corn chips.
glass of fruit punch.
gburger chicken griller on roll with vegenaise.
more chips. :rolleyes:

yeah, not so healthy today...

eta: bowl tomato soup and grilled cheeseburger (ezekiel bread grilled w earth balance topped w fyh cheddar, vegenaise, onions, ketchup, gburger char grilled burger)
and some screwdrivers

Blackcurrant, vanilla and ginseng tea.
Two cups of Yogi Choco Aztec Spice tea with soya milk and sugar.
Celery.
Bowl of strawberry Country Crisp with soya milk and a sliced banana.
Baked potato with baked beans and nutritional yeast.
Clementine.
