Yesterday evening I made some plain vanilla cupcakes so that I can make a trifle today or tomorrow. My housemate had been out to see Norman Lovett at the comedy festival and bought a few friends back later on, I came into the kitchen to find them scoffing my cupcakes without asking  - I felt slightly less annoyed when one of them said that they were fantastically light, and delicious :)

That's really disrespectful of them Twinkle  Still, it sounds like you might have some converts on your hands... :)

Today I have eaten:

B: Cornflakes with soya milk, soya cappuccino.

L: Tofu loaf, "salad" of chopped apple and grated carrot, walnuts and poppy seeds with vinegar and olive/flax oil dressing. A few Brazils and almonds, a pear. Two glasses of freshly squeezed orange juice.

Dinner will be borlotti beans in tomato sauce with carrot, celery, onion and rosemary, probably on toast.

So, I've decided that I love work, mainly for the fact that when I'm there, I can't constantly eat! We have a 3 day weekend this week and I've done nothing but sit on the couch and contemplate what I'm going to eat next, before I've even finished the food in front of me.

Breakfast: Apple & bowl of cereal with soymilk
Snack: 1 slice bread with pb&j
Lunch: stir-fry with 2 egg rolls
Snack: 1 slice bread with pb&j and oreo thin crisps

*I'm sure that I'm going to keep eating today, but I'm probably not going to post it because it isn't going to be a good day.

Pavo, you should be more worried about the toilet shock. Dried fruit are mother nature's laxatives!

I think I'm quite used to toilet shocks after my fasting week ...anyway, since going vegan, my digestion has always been fine (used to have a lot of trouble before, caused by dairy products mainly, I guess).

I liked the pasta mexicali a lot, and so did the omni friend I had over for dinner! I baked one part of it (made enough to feed about 6 people) and had the leftovers for lunch at work. So quick, so simple, so good!
