L: Fried large flat field mushroom in a large wholemeal roll with fried red onion, sundried tomato hummous and salad. With a carrot and walkers baked salt and vinegar crisps on the side (best lunch ever!! so tasty, everyone should try the mushroom 'burger').




I used to eat those ALL the time last summer! You've just reminded me to start making them again!! :D

Today:

1 cup of Nirvana tea.
1 bowl of cornflakes with strawberries and vanilla soy milk.

Almost 5oz of chopped organic strawberries (sooooo good!!)

4 bean salad (butter beans, green beans, kidney beans, chickpeas, red pepper, onion).
40g pretzel chips.

1 cup of coffee with Silk creamer.
1 piece of dark chocolate.

About 1 litre of water throughout the day.

"Bacon" burger - Yves veggie bacon, vegan cheese, tomato slices, ketchup on a bun.
Alexa Organic crinkle cut oven fries.

1 cup of chocolate spice tea.
1 piece of multigrain toast with peanut butter.
3 pieces of dark chocolate.

Wow Roxy, your day sounded great!

Yesterday I had:

Breakfast:
Oatmilk cappuccino.
Banana.

Lunch:
Butternut squash, lentil and ginger soup.
Apple, a few dried figs.

Dinner:
2 black beanburgers (homemade) with sliced tomato.
Steamed green beans.
2 apples, a few dried prunes.

Cup of camomile tea.

This morning I made the Power Porridge recipe from the Candle Cafe Cookbook, with pecan and coconut marmalade. This was SO GOOD!!! :cool: I need to eat more grains, and this recipe blew me away. Highly recommended.

Fifteen beans? That sounds like a great soup! Recipe please :D

It's in a bag from the store :) I would never have the drive to collect fifteen kinds of bean!

B: 2 thick slices wholemeal toast, one with pb & jam and the other with avocado spread (1/2 avocado mashed with a little lemon juice and black pepper). A banana and a coffee.

L: Nice and simple - raw veggie sticks with lots of homous, chopped tomato and hazelnut tofu chunks. An apple, banana, raspberry soya yoghurt and another coffee.

D: Not sure yet... Probably some rice and leftover daal from last night. Chocolate icecream also sounds good :D

Chickpeas in a lemony sauce with brown rice and a side salad

Tea
Split pea, swede and carrot soup with rye crackers

Rice cakes and pinto bean spread

yesterday:

pasta with curry sauce
2 stuffed bell peppers

half a bar Rittersport marzipan chocolate

one blood orange

2 cups of coffee with lotsa vanilla soymilk

at the Chinese diner: rice with sweet-sour sauce, a sprout salad, mixed veggie tempura, huge spring roll

I tend not to post here, but I've been on a huge greens kick recently, and I'm quite pleased with what I made last night.

Cauliflower in tofu-tahini sauce
Spring cabbage stir fried with onion, soya sauce and garlic (absolutely delicious)
Baked potato
Raw cherry tomatoes.

Today I've had a toasted half-wholemeal homemade roll with yeast extract for breakfast, too many chocolate biscuits, a mixed fruit and flax seed smoothie and a vitamin pill :)

wow! where do you get pecans in italy though?!?:eek: :confused:


Anyway, here's my day:

a few slices of fresh pineapple
piece of chocolate truffle cake

huge fruit salad (apples, pears, tangerines, pineapple, kiwis, strawberries, mulberries and other berries :p, lemon juice)

2 huge pieces of chocolate cake:o

supper will be:
chard dressed with olive oil and lemon juice
big portion of hummus, maybe with some pickles and tomato

I was just going to have fruit..but the hubby wanted to go out....I really hate eating out. There are no vegan or even vegetarian friendly rest. around here....
So i had..
a cup of oatmeal (I brought my own raw sugar, earth balance and soy milk with me lol)
whole wheat toast dry..in which I used my earth balance
Hot tea with lemon.

D:
Lemon tofu with broc.

2 cups raspberry leaf tea
bowl homeade corn chowder (from La Dolce Vegan)
1 homeade biscuit w/ earth balance

Today:

1 cup of Nirvana tea.
1 bowl of cornflakes with strawberries & vanilla soy milk.

4 bean salad (butter beans, green beans, kidney beans, chickpeas, red pepper, onion)

5oz chopped organic strawberries.

About 1 litre of water throughout the day.

Tosted chicken, cheese and onion sandwich (12 grain bread, Yves veggie ground "chicken", vegan cheese, organic onion.
Side salad (shredded organic romaine, chopped tomato, orange/cranberry vinigrette)
A few tortilla chips also on the side.

1 cup of chocolate spice tea.
4 oatmeal cookies.

Me and my housemate stuffed ourselves to bursting yesterday, we spent the evening feeling rather sick :s oh dear! Here's what we ate...

B: Strawberry oat cereal, chopped banana and freshly squeezed orange juice.

L: 6 Falafels with hummous in a pitta, side salad and potato wedges.

D: Big (and i mean big!) bowl of salad (avacado, tomato, sweetcorn, lettuce, mushroom, spinach) with dressing and a bowl of rice with chilli sauce on it to accompany.

S: 8 vegan truffles and a fresh carrot and orange juice.

My tummy still feels full today! And as we have some friends coming we are going out for a meal this evening, oh dear!

Heres what i had yesterday

Breakfast: porridge with oat milk, rasberry jam and sugar

Lunch: oat biscuits

Dinner: Pasta with tomato sauce, chopped onion and pepper

Snacks: two slices ginger cake, popcorn and half a packet of kettle chips :rolleyes:

We wanted something really nice today. We used to go into the deli when we were not vegans and pig out - whn we were veggies we used to pig out in speciality cheeses and the like but there seemed to be nothing in there for vegans that is really moreish:confused:
In the end we got some olive bread, pickled walnuts (finely sliced) and some tomato and chilli chunky pasta sauce and put it all together - it was fab:)

Hemlock I've never tried pickled walnuts - do you think it's possible to DIY it at home?

Stezzy what's quinoa mince? Sounds intriguing!

Everyone's food sounds great :)

Piggy I cheated and used walnuts instead of pecans. We did manage to get a bag of mixed nuts at Christmas that had pecans in it, but I've never seen them otherwise.

It's basically the same as the grain quinoa, but thickened up a bit to make it more mince-like. You can also buy quinoa chunks, for meals/sauces with more of a texture :)

This was the first time I made it and it was a huge hit with my hubby. He likes everything I cook anyway, but he was really raving about this.

piece of cinnamon raisin bread (sample from new bakery)
snickerdoodle cookie (from bakery...too sweet, like my homeade ones better)

baby carrots w/ garlic hummus

yves veggie burger on ciabatta roll w/ soy cheese, mixed greens, onions, ketchup, spicy mustard, vegenaise
alexia oven fries w/ ketchp & vegenaise
cup sugar cookie herbal tea

(I probably ate way too much, but then I always do!)
