does anyone know of any vegan italian dishes? going out to eat for dinner.....

Hold it! Call the restaurant ahead of time to find out about their pasta, whether it has eggs in it or not. Also, you should make sure they don't put anything funky in their marinara sauce. If those aren't vegan, it's not worth going.

I'd order pasta with marinara sauce and vegetables, if they have any that aren't covered with cow butter.

Salad is always an option and perhaps their minestrone is vegan. Always check with the individual restaurant, and you might as well tell them you have allergies, just to make sure they tell the truth.

Artichoke is right, if you're unsure about the specific restaurant then be sure to call ahead. Pasta can be made with eggs (athough most spagetti isn't) and the marinara sauce can have anything from cheese to anchovy (i think it's usually extract) in it.

Order a cheeseless pizza! But do phone ahead to check for those funky ingredients (there could be some dirivitives of some poor cow/unborn chicken etc in your pasta, pizza dough or sauces).
