View Full Version : Anyone has recipe for vegan cheese?

The night before last, I made a non-dairy vegan cheese from a recipe I found in the "Native Foods Restaurant Cook Book".

It didn't look to appetizing at first while I was making it, but I followed the instructions which were so super easy, put it in the fridge overnight and it set-up by morning. It is great!

My husband had it on a veggie burger for lunch yesterday, and last night we used it on pizza the way its used at the Native Foods restaurant. So creamy, smooth and tasty. :)

The only down size of this recipe I thought is that it was a bit on the expensive side for the ingredients used, but when you compare the cost of the non-dairy cheeses sold it pays for itself in freshness and the amount it makes...quite a bit! $6 for agar (thickner) and $6 for two cups of raw, unsalted cashews.

If anyone is interested let me know and I'll post the recipe here. I made this in about 20 minutes tops, including prep and cooking time too. :D

Taken from "The Native Foods Restaurant Cookbook" by Tanya Petrovna

Native Ch'i's (Nondairy Cheese)

3 cups water
3/4 cup agar flakes (or a 1 oz. package)
2 cups raw cashews (unroasted and unsalted)
1/2 cup lemon juice
2 Tbsp tahini
2 tsp. salt
1/2 tsp garlic powder
1/2 tsp onion powder

Place agar and water in a saucepan and bring to a boil, whisking occasionally. Turn to simmer for 5 minutes and continue to whisk; the mixture will thicken.

Grind cashews in a blender to form a powder; it shouldn't be coarse. You may need to do in in two batches 1 cup at a time so that it grinds well. Put all the ground cashews back in the blender and add the lemon juice, tahini, salt, and garlic and onion powders. Then pour in the water-agar mixture. Blend until smooth and creamy.

Pour into an oiled loaf pan and refrigerate until firm.

Slice and serve. Store in refrigerator.

You should pick up a copy of "The Ultimate Uncheese Cookbook". I bought it as a present for my sister, who's allergic to cheese, but I ended up photocopying about 30 recipes from the book to keep for myself! There is a chapter all about block vegan cheese, including a mozzarella that you can shred and put on pizza. But really, the whole book is worth looking into. Their nacho cheez sauce is to die for, and I just made some broccoli cheez soup today that's really good. But if you don't want to buy it, let me know and I can post a recipe for you. Though I haven't tried any of the block cheeses yet, so I'm not sure how good they are. I've heard good and bad reviews.... Just let me know if you'd like me to post a recipe; but I highly recommend "The Ultimate Uncheese Cookbook!".

Yoggy! You gave very good advice! Many of us have the book you mentioned and some of the posted recipes on this forum come from that book.

Awww, thanks guys :D I knew you cared. But don't worry, I was only joking. I'll post some of the block cheese recipes after I've tried them myself and seen if they're any good. I've read some mixed reviews about some of them, so I'll try them out and then post the recipes if I think they're worth trying out.

I've tried many and have found the Jack or Chedda to be our favorite. We make the eggplant parmizano often also.

There's also an AWESOME cheese sauce recipe, the best I've ever had, at www.randomgirl.com. It's in the broccoli rice casserole recipe.

This one ROCKS...

175g tofu
50g coconut oil, melted
1 tablespoon rapeseed oil
1 tablespoon lime juice
1 tablespoon agave syrup
2 teaspoons salt

Blend/ liquidize. It keeps for a week.

Its mind blowing on toast with a sprinkling of paprika.
