This is from a cookbook of bag lunches. I hate buying lunch at school, but I get bored with the same old thing, so I'm always looking for lunch ideas. I love this salad, it's really crunchy and flavourful.
one 19 oz (540 mL) can of chickpeas, drained and rinsed
1/2 cup diced celery
1 sliced green onion
1/2 cup diced red pepper
one 14 oz (398 mL) can of stewed tomatos, drained and chopped
DRESSING
2 Tbsp olive oil (I prefer a little more)
2 Tbsp white vinegar
1/2 tsp dried basil
1/4 tsp dry mustard
1/8 tsp garlic powder
2 tsp parsley flakes
Combine the first 5 ingredients in a medium bowl. Mix up the dressing ingredients and pour over the salad, mixing well. Chill before serving. Makes 4 cups. Keeps for 3 days.
