Cup of broccoli

3 button mushrooms

3 kiwi fruits

1/2 onion

about 3/4 cup zucchini

(not much because i got up late and couldnt eat too much today:o )

Im not clued up on how much counts for a serving, so im not sure how how many i had........:( :)

Depending on what was cooked and what was raw, it's between 3-5 servings.

In order to promote healthy vegans and healthy veganism, I'd like to start this thread where we post healthy eating days where we get in at LEAST 10 servings of veggies and fruits.

All the most respected vegan Doctors and nutritionists suggest emphasizing fruits and veggies as our main foods, so why not take advantage of their expertise and guidance and do our bodies a favor by eating really well?

In general, a "serving" of Vegetable is:


• 1/2 cup cooked or 1 cup chopped raw vegetables or
• 3/4 cup vegetable juice or
• 1 cup of raw leafy vegetables


In general, a "serving" of Fruit is:


• 1 medium-sized apple, banana, or orange or
• 3/4 cup of fruit juice or
• 1/2 cup of chopped, frozen, cooked, dried or canned fruit

Happy, healthy eating :D

Here's the serving guidelines for this thread, Happycow ;) A standard "cup" is 8 oz.

So, if you are eating them raw, you measure a serving out that way and if you are cooking it, you measure after cooking (as veggies loose water and shrink during cooking and the serving size reflects that).

Okay, so today i have managed...

Breakfast:
cup orange, freshly squeezed
i grapefruit
2 nectarines

Lunch:
salad:
oak leaf & ice berg lettuice,
watercress
grated carrot
beef tomato

Tea:
butter beans
broccoli
sweet potato (does that count)

Afters:
baked apple with
dried apricotts
sultanas


I'm feeling well smug myself now.

Today:

1 serving tomato
1 serving banana
1 serving cranberry juice
1 serving onion
1 serving celery
1/2 serving corn
1.5 serving carrot
1.5 serving potato

Total = 8.5

Monday to Friday I eat: 4-5 apples, 3 clementines, 2 mandarins, 1 banana, 3 pears, 1 portion of grapes or strawberries, 2 portions of salad (lettuce, rocket, cucumber, beetroot, celery, radish & carrot). That's while I'm at work. When I get home I sometimes eat more vegetables, sometimes it's just nuts, seeds & dates.

seaweed (kombu) in miso soup
celery

included in various dishes throughout the day

Today I went shopping, and I bought the following:

Big head of kale
Avocado
Snow peas
600g bag of frozen berries
4 kiwis

We already have bananas, lemons, lettuce, tomatoes, red peppers.

I plan on eating 10+ tomorrow.

1 serving of raspberries (about 1 cup)
1 pear
1 apple
2 servings of raw spinach
serving of tomato soup
big serving of mixed veggies at lunch (cucumbers, black olives and jalapeno peppers)
spinach wrap

Probably 8 today :D

I BARELY made 10 today! I was in Los Angeles and ate at "California Vegan" (such goooood Thai Food!).

I can't imagine eating 6-7 cups of salad in a sitting though :eek:

well let's see, I had potatoes, tomato, and 2 plums for breakfast, then cranberries, a 100% fruit leather, more tomato, a bunch of home-made applesauce(my fav!), carrots, salad, and some berries...that comes out to...probably 13!! Wow, i never knew I ate so much of these foods! It just comes so naturally now! :D

I love salad too, but 6-7 cups of mixed veggies and greens equalls a LOT of chewing and a LOT of bulk in the belly! That is the size I usually make for my family of 3 to eat with meals (a large mixing bowl full, so we each get about a cup of mixed greens and then a cup of mixed various veggies like shredded beets tomato, onion plus sprouts).

i know, but for some reason i can eat alot of food in one sitting :| its wierd! the most of salad ive had is about 5 cups in one sitting WITH other food, so i wouldnt be surprized if i could eat 6-7 cups by itself.

I don't like salad, it bores me. I only eat it once in a while.

Lettuce is the most boringest thing ever.

That being said, I might have one for lunch today since I have lots of veggies.

yikes you make me feel like a pig :olol i didnt eat it all at one sitting though, so its all good, i couldnt eat all that at once.
Not that there's anything wrong with that, Foxy;) Its all good healthy Salad. :)

Sorry Sweetie, you are not overeating by any means and I didn't mean to imply that! I am just commenting because I am wondering if you have measured correctly because the way you lay it out it looks like 3 small meals in the "what I ate today" thread and here, it looks different. :o Even if you ate 20 cups of salad over a few meals, it would be a good thing! Keep eating lost of healthy foods, you growing girl, you!
