I looked for a post about this with no avail so here i am!

I have these two gigantic portabella caps and i'm going out of town this weekend and i'm afraid they may go bad by the time i get back/have time to make them. Anyway, can i freeze them? If i can should i do anything to them first? :o :(

I'm sure you can freeze them, as I have seen bags of frozen mushrooms for sale in Whole Foods. I don't know if you have to do anything special to them first though. Maybe slice them up? Try doing a google on "freezing mushrooms" and see if you come up with anything.

It is best to cook or blanch them first. Know that the texture will change and if you cut them, they will be easier to deal with when you decide to use them.

If you don't want to do that, you could always wash, slice and marinade them while you are gone and come home to a *delicious* sauce ready to saute' up with onions, garlic and a bit of rosemary to serve over rice :D
