View Full Version : Cookies made out of vegetables??

I came across this recipe on vegweb.com when I was looking for a cookie recipe. Apparently, you can make cookies out of just radishes and maple syrup. I've never had a radish before (well, I probably have had it in something, but I don't know what a radish tastes like). Do you think this would turn out like a cookie or more like just a sweet vegetable dish? If it really tastes like a cookie, then this is too good to be true because I have a hard time getting all my vegetables!

Minimalistikies

Ingredients (use vegan versions):

1 Organic Japanese Daikon Radish
Organic vegan maple syrup (I use Grade A)Directions:

1. Preheat oven to 350 deg.
2. With a knife, cut radish into thin circles (5mm thick).
3. Put maple syrup in a bowl.
4. Soak radish circles (a few at a time) in maple syrup, and place them in a cookie sheet.
5. Put cookie sheet in the oven for 15 minutes. 6. Enjoy!

Japanese Daikon Radishes are suppose to taste different, I think.

But still, I think these sound gross.

Daikon is spicy, pungent and bitter. I would NEVER enjoy maple syrup and daikon "cookies".

I do like carrots and zucchini in breads, muffins and even cookies.

Mmmmm! I love zucchini cookies!
