2 cups TVP
2 cups water
1/2 cup quick cooking oatmeal
1 tablespoon soy sauce
2 teaspoons EnerG egg replacer beaten with 2 tablespoons water
1/2 medium onion, finely diced
16 oz. can peas
14 oz. can corn
3 carrots grated
ketchup

Boil water, pour over TVP, when it's all absorbed its ready (took about 20 min for me)
Mix all ingredients together and press firmly into a greased loaf pan. Cover top liberally with ketchup and bake at 375 degrees for 35- 40 minutes.

Sounds good. Too bad I can't get powedered egg replacer here. :(

Here is a recipe for homemade Ener-G:

Ener-G Type Egg Replacer

1 cup potato starch
3/4 cup tapioca flour
2 tsps baking powder

Mix all well.
Store in airtight container.

To use:
1 & 1/2 tsp powder + 2 Tbs water = 1 egg.
1 & 1/2 tsp powder + 1 Tbs water = 1 egg yolk.

When measuring, press powder firmly into measuring spoon.

You could also try grinding up 1 cup of flax seeds in a coffee grinder and then blend that along with 2 cups of water; 1/4 cup of that mixture is equal to 1 egg.
