I made this recipe from How It All Vegan's Mashed garlic potatoes with Kale this morning
and OH MY! was it good. My comments in [ ]
3-4 Medium potatoes, roughly chopped [i used 5 red potatos]
[I added chopped carrots to the potatos and boiled them together]
1 medium onion [yeah...i don't eat onion so i didn't add this]
4 garlic cloves, minced
2 tbsp. olive oil
2 cups Kale, chopped
1/2 cup soy milk
2 tbsp. flax oil
2 tbsp. Braggs [this seemed a bit much for me. I would lower it to 1 next time]
pepper (to taste) [Opps. I was so hungry i forgot!]
In a large pot of water, bolil the potatoes until they can be pierced easily with a fork. In a
medium sauce pan saute the onions and garlic in the oil on medium heat until the onion
becomes translucent. Add the kale and cover the pan with a lid. Lower heat and simmer
for 5-10 minutes or until kale becomes soft. Set aside. When potatoes are ready, drain and
place them in a large bowl. Mash together with milk, flax oil, Braggs and pepper. Stir in
the kale mixture amd mix together well.
Makes 4-6 servings [or one and a half for piggys like me!]
