.. for those who have food sensitivities/allergies or just want to cut down on wheat etc a good book is Vegetarian Cooking Without by Barbara Cousins.
Often food sensitivities go unnoticed as they don't show immediate and severe symptoms like allergies do. I find if I eat too much of the food I'm sensitive to it makes me bloated, gain weight and irritates my nervous system making me anxious and disrupts my sleep.
